  1. Wow, this has to be one of the coolest threads of the Rebellion. Can't wait to see more pictures!
  2. A staple in our house is bacon wrapped chicken breast. I cut the chicken breast into strips, usually 3 from a breast, and then season them well with chili powder, onion powder, and garlic powder (feel free to season them with whatever you want). I wrap each strip in a slice of bacon and then bake at 375 F for 33 minutes. The chicken is juicy, the bacon is crispy but also chewy and it is delicious. Sometimes we do it non-Paleo as well and roll the bacon wrapped strips in brown sugar before baking. They are amazing. I guess I could get the same result and have it be Paleo friendly by drizzling a little maple syrup.

  5. We ditched cable last summer and use Hulu and Netflix. For anything not on those websites I either go to their website or stream it from other websites. I do not download or rip them, just watch them straight from websites that have them. Project Free TV is a good place, as is TV Links. I have been kicking around the idea of using a Leaf Antenna to get the free channels floating in the airwaves as well as a Roku player, but do not have either of those. Hulu, Netflix and finding shows online seem to serve us pretty well.
  6. I made this for dinner last night and it was very good. I did not make the beans, but I did make spinach with it. Photo Credit: Mitch Mandel 3 cloves garlic, mincedGrated zest of 2 oranges1 tbsp fennel seeds1 tbsp chopped fresh rosemary1 tbsp olive oil1 pork loin (2 lb), preferably with a small rim of fat still attachedSalt and black pepper to tasteYou want to make a paste like rub out of the garlic, orange zest, fennel seeds, and rosemary so put them on a cutting board and run your knife through them until it starts to resemble something that you can rub on the pork loin. After that, add the olive oil and mix it together. Rub it all over the pork loin and add some salt and pepper and then you can either pop it into the oven or let it marinade in the refrigerator for up to 4 hours. When you are ready to cook, pop it into a 450 F (I believe that is 232 Celsius) and cook until the internal temp is 150-155 F. I had a 2.5 lb loin and it took 55 minutes. Take it out and let it rest for 10 minutes and then slice it up. I served this with roasted asparagus and sauteed onions and spinach.

I will only allow a small pat on the back because I have been to this place in the journey before, but it feels great to be moving along again.   8. Those of you that know me here also know that I have been trying to get fit for awhile...and have failed miserably. Every few months I come back here, beaten and worn out, but with renewed vigor to try again and with hope for the future. I join challenges, make promises, and do well, for about a week and then I vanish once more. Well, here I am again, really wanting to make this work this time. I have gained weight and now weigh more than when I very first joined the rebellion (but UncleTone isn't that the opposite of what the rebellion does?). Well yes it is observant observer. So what is different this time? Glad you asked. This time I have some support in my life which is setting me up for success. My wife, wanting another baby, wanting to get into a little shape herself, not wanting to become diabetic when she is pregnant, and probably because she sees that I am out of breath from carrying a baby filled car seat up the stairs, has decided that she wants to go Paleo/Primal. I have gone Paleo in the past and it has given me great results. I lose weight, I feel better, I sleep better, I er...practice making babies better ( ) but after a few weeks I have always dropped the ball and let it completely derail me. It was doubly hard because while I was eating Paleo my wife was eating all the things that I over indulge on in the first place. Now with her on board it will be much easier to change our eating lifestyle and it will much cheaper because I will be shopping for a single meal plan and not multiple. The other setup for success is that I now have a gym buddy. My mom, who lost over a hundred pounds in the past 24 months and is in the best shape of her life, offered to be my gym buddy. She runs, she weight trains, she is awesome and thus, I took her up on the offer. Whereas I can easily flake out on friends and make excuses to not go to the gym, I can not flake out on my mother and I know that if I do not show up at the gym she will come knocking on the door...or at the very least make me feel very guilty, a gift which all mothers are bestowed. So with two very good support systems in my life I am ready to make this happen, I will make a Battle Log soon, and I hope you will all welcome back a Prodigal Rebel!

The place that I work at takes care of "nursing home" patients as well as orthopedic rehab, joint replacement, ventilator patients, mental health patients etc. We provide "nursing home" services but we also provide care for very ill patients so we are considered a skilled nursing facility as opposed to a hospital, clinic, nursing home, or assisted living center. Not sure who came up with the term...probably a bunch of lawyers somewhere Honestly I came to work there because they were hiring at the time first and foremost, but once they asked me for an interview I did a ton of research to see if I actually wanted to work for them as a corporation and throughout my orientation I learned a lot about them and about the people that worked there. It is all about trying out a bunch of different places. I thought that I never wanted to work with older adult populations but I enjoy it now. It is not the population, or facility, that I want to work at forever, but it is a good fit right now.

  11. I am back for this challenge, and this came not a moment too soon. I have been slacking...slacking bad, but I started to get back on track. I figured a challenge is a great opportunity to kick it into high gear. I have a horrible habit of not actually finishing challenges and feeling horrible for it, so this time I need to finish this challenge! Here are my 3 fitness goals: Walk/Run 1 mile 3x a week Free weight/Bodyweight exercises 4x week Primal eating 99% of the time And here is my life/career goal Complete 100-200 questions/day to pass licensure exam. There we have it for now. ETA: It looks like I forgot to add attributes, I will do that in a bit.

  13. YES!!! That is definitely from a Guster song, "The Captain", and thought it fitting as my mantra for losing weight and getting healthy. My wife got me into Guster when we first started dating and they are easily my favorite band. Awesome to find someone else that loves them.
  14. If you can, find a butcher or farmer's market over a grocery store. You can usually find everything much cheaper at those types of places. My local farmer's market is the only way I can afford quality food products to feed my family right now. Eggs, chicken, and ground beef or turkey are usually my big protein sources and are fairly cheap. At the local farmer's market here the butcher will sell 10lbs of boneless chicken breast for $15-$18 total or 10lbs of boneless chicken thighs for ~$10 total (1.50-1.80 a pound and $1.00 a pound respectively).
  15. I usually use veggies as a base for something. Having steak? It is sitting on top of, next to, or under a whole bunch of veggies. Veggies steam quickly in the microwave making them very easy to prepare and you can keep a lot of them frozen until you are ready to use them. I try to get a vegetable with every meal. If I am having eggs in the morning I will also have spinach with it etc etc. The blender idea is also a great one, especially if you like V8.
