  1. Next time I'm going to have to add the stop swearing goal - I love that. I have a terrible potty mouth with my friends and it occassionaly most of the time carries over into my work and family life. I remember the first time I dropped the F bomb in front of my mother.. I thought I was going to die.. or get killed by her! Good luck with that one, it's a difficult one in its own right outside of health related goals. Or at least it would be for me.
  2. I just saw some pictures from the Zombie 5k run here in the Dallas area and it looked like a blast! Once I get my health and fitness back in check I might have to sign up for one next year.
  3. I completely hear you on when it's in front of your face it's so hard to be good. That's why I've got a similar goal. I've giving myself once a week for out food. Mostly because Father's Day will fall in this six week challenge and we typically go out to eat on Father's Day as a family. Good luck to you on meeting your goals
  4. I'm gearing up for week one. I have grilled rosemary chicken breasts and some green chili marinated flank steak that I grilled last night. I've portioned them into individual baggies to take to work next week for all my lunches. I'm planning on doing big salads with either the chicken or beef with an avocado ranch dressing (dairy free) with a couple of veggie muffins and one small piece of fruit. I think my walking goal will be the hardest to accomplish, here's hoping I make it through the first week with all As!

  6. This is a modified recipe of my mother's that I've made paleo. It's super easy and you can tailor it to your own personal tastes by changing up the veggies and seasonings. These muffins are super easy and have the consistency of Thanksgiving dressing. Shredded veggies (I used zucchini, carrots, kale and broccoli) Onion, shredded Eggs Almond Flour (for non-paleo you can use bread crumbs) Seasonings salt & pepper For every cup of shredded veggies use one egg, about 1/4 cup of almond flour and one large inch slice of an onion. If you use zucchini shred separately and turn out onto a tea towel or cheese cloth and squeeze until majority of the water is released. My typical go to spice blend is poultry seasoning and sage, I like to play up the dressing consistency . I also add a bit of red pepper flakes for a bit of heat. Mix everything together into a bowl. You're looking for a moist mixture not too wet or too dry. Bake in a muffin tin or silicone muffin cups for 30 minutes in a 350 degree oven. If serving a large group for one meal you could bake it in a pie pan and cut into pie wedges. I like the muffins for portability to take to lunch. I also love the flower shape of my silicone muffin cups.. the flower shapes make my lunch happy The original recipe called for shredded cheese as well. If you're doing dairy you'd use 1/4 cup of shredded cheese to each cup of veggies. My mother typically uses pepper jack in the ones she makes which is why I add the red pepper flakes. I'm used to them having a little bit of heat. You get about 6 muffins per cup of veggies. I apologize for this not being a typical recipe but it's more of a creative free form kind of recipe. I've used cauliflower, cabbage, green beans and swiss chard. I've made them Italian seasoning and a bit of pesto and those were also delicious. Use your imagination and what you like.

  8. Level Up My Life - My First Challenge I’m 5’3†and weigh 260 lbs. I can’t believe I had to type that. Two years ago I lost 75 pounds and got down to 185 pounds and since then I’ve gained it all back. I told myself when I got under 200 lbs I’d never go back there. I was doing so well and then I went on vacation and allowed myself to eat whatever I wanted and for two years I’ve apparently still been on that vacation. I could say life got in the way, but that’s just an excuse. It’s too easy to fall back on a lifetime of bad habits, and I did. I have a closet full of clothes I can’t wear and hardly any clothes in my old (and current) size because I gleefully gave them away to charity when I lost weight two years ago. I don’t want to buy anymore in this size. I also bought a house this year and I want to be able to take care of my yard myself. I don’t want to hire someone to come mow my yard because I can’t handle the exertion of doing it myself. Goals: 1. Eat Food I Make / Assemble Myself - Fast food and restaurant food (especially breads and desserts) have always been my weakness. I am allowing 1 meal out each week (but not fast food) and I can’t carry them over. If I go a week without, it’s gone. CON - 2 CHA - 1 WIS - 1 A = No out food at all B = 1 Meal out each week F = More than one in a week 2. Work up to walking for an hour at a time with stretching afterward four times per week. Week 1 & 2 = 30 - 40 minutes, Week 3 & 4 40 - 50 minutes, Week 5 & 6 50 - 60 minutes STR - 1 DEX - 1 CON - 2 STA - 2 A = 4 times each week B = 3 times each week C = 2 times each week D = 1 time each week F = no walking at all 3. Maintain my yard without paying someone to do it for me. Mow, weed whack and enhance my yard with some sort of planting be it ornamental grass, flowers or a few herbs or all of the above. STR - 1 CON - 1 STA - 2 WIS - 1 A = Mow, weed whack and/or plant something F = No work in yard at all
