  1. I have a recipe for wedding soup that has some killer looking meatballs. The boyfriend doesn't eat soup but loves comfort foods, so I wanted to do more of a meatballs and red sauce thing. We're not particularly low carb, just gluten free, and I wanted to up the nutrient content by adding some vegetables that will go with the noodles not just replace them. Because I'm not looking to hide them or replace something bland with bland veg, I'd prefer to use something more nutrient dense than zucchini. Any ideas?
  2. I happened to throw this together cleaning out the fridge last night and though I'd share. It's a little oily but it has a nice Greek feel to it. My wife went nuts on it when she got home from rugby practice. Serves 3 - 4 2 Tb olive oil 1 lb Ground Turkey 2 cloves garlic - minced 1/4 c Kalamatta olives - Sliced 1 Eggplant - cut to half inch cubes 1/4 c Italian Dressing 2-3 Tb lemon juice Salt Pepper Herbage (I grow rosemary so that's what I used) Penne Pasta Start water to boiling for pasta to speed things along later. Heat up the oil then add turkey, salt, pepper and garlic. Cook on medium-high until cooked through. Toss in your eggplant, olives, herbage, dressing and lemon juice and cut the heat to low. Let simmer while you make your pasta (10-15 minutes). Drain the pasta and toss in the sauce for a minute or so. It's great as is, but a quick shot of Feta or goat cheese might not be a bad idea.
  3. Hi everyone, I've been following a paleo diet all the time except for one meal per week, since I was convinced by some of the carb cycling videos I saw. Is this a good diet plan? Is it better or not to take a very high carb meal once every week?
  4. Hi all! I'm wondering what kind of spiralizer everyone uses to make Paleo Pasta... zucchini pasta and such. I need a good one, and I'm okay with spending a little more to buy one where I won't cut off my fingers. Amanda
  5. Hi. My name is Sara Benincasa. I'm a comedian and a writer and a human. I played a lot of King's Quest when I was a kid. I was in marching band for two years, and I was actually on a competitive baton and flag squad. On purpose. I spend a lot of time on Twitter and Facebook when I ought to be a.) working on my novel b.) working on a script c.) eating healthy foods or d.) exercising. I try fad diets and then stop them. I always sucked at sports and so I react to the thought of exercise by whining and running in the opposite direction (generally straight to bed to take a nap). I'm here because I'm a nerd and I want to get fit and I'm not sure what to do about it. I love bread and pasta and ice cream and I'm pretty sure I'd love a cronut if someone put it in front of me. I'm not good at denying myself the nomz. I like yoga, but I don't go. I even like lifting weights, but I don't go to the gym. I spend a lot of time napping and avoiding the great outdoors, and I'm tired of it. I also -- and I wrote a memoir about this, so I'm comfortable posting about it in an open forum -- deal with depression and anxiety, and take medication to help. Recently I tried to blame my weight gain on the meds, but my doctor said nope -- it's not the meds. It's the fact that I'm sedentary and that I loves me some carb action. And he's right! So I'd love to hear your inspiring tales, even if you've only lost five pounds. Five pounds sounds amazing to me right now! Good luck to you. I hope you are having an awesome day. Best, Sara B.
