  1. Let's do it. I have been trying to get in better shape for a while. I used to be more active but a lot of people say that. It is hard sometimes to remember where I used to be in many aspects of my life. I want to be more reliable physically, increase my endurance and strength and become more capable physically and mentally. There are so many resources out there and I want to use them efficiently and NF is one of those communities I want to be an active part of. i'm going to try to keep up the theme of 'official /technical reporting' in my challenges, mostly as a creative exercise. 2. I dislike vegetables. Since learning about nerd fitness I've tried kale and asparagus. Didn't like both. So i'm looking to try more vegetables and hopefully find one I like! So, what are your favourite vegetables and how do you cook them?
  3. I discovered that a Chinese veggies can replaced pasta. On Choy or water spinach is a type of veggies you can find in Asian stores across the US. It has hollow stalk and deep, soft green leaf. It's really delicious in the stir fry. It's super delicious with garlic, soy sauce, and chili pepper. However, sometimes you just want something more fun or Western to play around (I am Asian, most meals I cook are Asian food)... I threw them into an oven, and the stalks turned out similar to Penne pasta. With other ingredients mixed in, I finished before I could take pics, sorry. But I'm sharing what I did anyway. Also, as you may notice at many home style Asian cooking. We don't measure stuffs. Every time we cook, it tastes different, but it's still delicious. (Sorry-- not exactly the recipe guy. I am new in the food room) Ingredients 1. A fistful of On Choy, coarsely chopped 2. A large tomato, diced 3. A stick of carrots, coarsely sliced 4. Optional: 3 slices of Bacon, squared 5. 1 lime, juiced 6. 2 teaspoons of olive oil 7. Salt 8. Chili pepper 9. Dillweed 10. Garlic powder 11. Optional: 1 tablespoon of wheat flour (makes it goopy/ crispy, but not necessary for the taste) 12. Black pepper Prep 1. Heat oven to 425 F 2. Dump the veggies into a bowl. Followed with bacon. Dump every ingredients in and use a tong to mix 3. Spread it over an oven pan. Evenly. Stick in in the oven. Wait 20 minutes. Voila. Serving : It alone serves 1 very hungry adults. Over rice, it may cover two reasonably hungry adults. Let me know if you've tried it and whether you like it or not!
  4. Hello everyone! It is time for a vegetable of the week thread in honor of the vegetable challenge and to take us into the next six week challenge! What I'm going to do: Every week I will take one vegetable, usually a less loved one, give a recipe for it, along with any interesting facts I find. What you'll need to cook along: For these recipes you will need some basic equipment. I suggest having a good knife, a cutting board, a colander, one good pan and one cookie sheet. Having those will get you through most of my recipes. Who is it for: My recipes will not be specifically paleo or vegetarian, though some will end up being such. If I know a way to change it I will make a note. Some of these will be main dishes; others will be sides. I don't have kids, so these will not be kid-tested. However, I have a 30 year old that eats like a five year old, so I will give you "Matt Ratings" that can be approximated to kid-testing. The Matt Ratings scale will go from NO!! (1/5) to Do I Have To Eat It? (2/5) to Do We Have Cheese I Can Put On This? (3/5) to Meh (4/5) to Omnomnom (5/5). If you try it and like it, let everyone know. Everyone should feel free to share their own recipes for the vegetable of the week for others to try! I will also take suggestions on what you want to see in the following weeks.
  5. In order to help me add vegetables to MY diet, I am putting forth the challenge to all Nerds to join me in learning about new vegetables and new ways to cook them!! Since this is my first PvP sort of challenge, I'm starting easy. This is a PvE challenge - i.e. players (us) vs. the environment (i.e. the world). I grew up hating veggies because they were an overcooked addition to a corner of my plate ... that I had to eat in order to get dessert. (You can see why I ended up fighting my weight ....) This challenge is an opportunity to stretch yourself and to get new ideas from fellow Nerd Fitness fans. The challenge to those who accept is this: 1) Work in alphabetical order (A to Z) and post one new (to you) vegetable recipe per day (or so) during the next 6-week challenge. 2) Make said recipe and post a picture of it. 3) If you make a recipe that someone else posted, and you like it, then "LIKE" it here in the forum. Recipes do not have to be particularly difficult. In fact, the easier the better. So, for instance, on day one, I might make a new recipe with Asparagus. The next day, I might try to find something with Brussels Sprouts that hubby doesn't despise. And then on day three, it could be something with Carrots or Cabbages. Get the idea??
  6. Greetings from Adelaide, Australia! My name is Em and I'm new to the rebellion. I made a new years resolution at the beginning of this year to get fit for a couple of reasons. In 2012 my Dad, who is overweight like me got diagnosed with diabetes and high blood pressure. I don't really want to go there. I'm starting to get a few health problems of my own from being overweight I miss punching things and I want my black belt. I got to brown belt black tip in Taekwondo but I had to give it up for a year, and haven't been able to get back into it.(I tried, but the fitness gap at the brown belt level killed me). I hit triple digits on my scales (metric triple digits) just after Christmas and I nearly died of shame.I've been overweight since I started high school. I've tried lots of things to get the weight off since I left uni, but nothing took. I did Taekwondo for quite a while. It kept the weight down and got me fitter, but didn't knock it off (that probably had something to do with the 2-4 cans of high caffeine energy drinks I was drinking every day). About a year and a half ago my body and mind went into meltdown (mostly because of all the Red Bull) and I stopped drinking energy drinks but I also stopped Taekwondo at the same time. The weight started to creep up again. I bought a house about 6 months ago, and I started to eat more junk and buy my meals from the work cafeteria. My weight started to creep faster. I hit 100 kg and said ENOUGH. So, why is it going to work this time? I got me a buddy in the same situation. We got a gym memberships at the same gym and we're equal parts encouraging and competing.I'm not just dieting or exercising, I'm trying to build healthy eating habits and make exercise part of my routine. My exercise plan is a mix of cardio and strength (if anything, it probably leans towards strength, because I'm enjoying it more)I'm getting my nerd on! I've got an engineering degree, and I work as a computer programmer, but I never have approached getting healthy like I approach a problem at work! Research, plan, execute! Stick to the plan unless it's clearly not working! Measure and report your progress! A old school friend put me onto this site and it's now my first port of call for fitness info. Its taken a while, but I'm starting to see some gains. I know I'm getting stronger, because my spreadsheet tells me so. I know my cardio is getting better, because I can run further on the treadmill in 10 minutes than I could at the beginning of the year, and I feel like I'm recovering faster. I'm just starting to see the weight move too. My greatest enemy will probably be my diet. I love food, and at work I have quick and easy access to lots of bad foods. I also LOVE to bake, and I'm not too bad at it either. What do I bring to the table? Well, one thing I kind of got a bit obsessed with when I got sick was gardening. Once you get going, it can be a super cheap way to get super fresh veggies! Nothing more fresh than picking it straight off the plant. I'm still trying to get my garden in my new house setup (My garden is typical northern suburbs CLAY, and the previous owners let the garden go), but that process itself may be a story worth telling.
