  1. So, for cocoa crack, there are tons of recipes if you google it, but here's what I do: In a small, stick free pot, on low heat, I combine: Coconut oil (6 table spoons is a good size) Cocoa powder (6 table spoons. Or however much oil you used, you use equal parts) Once those are melted together, add whatever sweetener you want. I've done it with Stevia, splenda, and xyla in the past, so whatever it is you use at home, just add it to taste and let it all cook together over the low heat until the sweetener is fully dissolved. Then, I pour it into an ice cube tray and put it in the freezer so they harden up into little chocolate bites basically. I store it in the freezer because my apartment gets too warm for it to really set well, but if your place is cooler, you can keep it out. That's the basics of the recipe, but the fun part is you can completely play around with this once that is all melted together. I usually add coconut milk right at the end (or creamer, I'm just dairy sensitive), which thickens the hell out of it and makes it really creamy. I also add unsweetened coconut flakes for some texture. You can add nuts, berries, vanilla or whatever flavouring extract etc. Possibilities are endless! It takes very little time to do and not long at all to set either. Or you can get really creative and layer it with other things in the tray. I've layered it with peanut butter, one time I layered it with avocado paste I made. Once you get cocoa crack down, it can be coating for other things too. I did plain, no sugar added coconut macaroons (egg whites and coconut flakes) with a coating of cocoa crack. I made sugar free bounty bars once and used that as the coating too. Basically, it's my chocolate substitute
  2. I know that extra virgin olive oil isn't used for cooking, but as a dressing for salads. Whereas, regular olive oil can be used for cooking over heat. My question is can extra virgin coconut oil be alternatively used for high heat cooking? As a Paleo dieter, I read in many Paleo books that coconut oil is good for high heat cooking, but on the product label, it says for medium heat cooking. I went to Fairway supermarket and checked as many different brands as I could and they all said the same, medium heat. Are you sure coconut oil can be used for high heat cooking?
  3. Hey all I'm back again to get more of your super awesome Paleo advice!!! Okay, so basically I went to the shop today to pick up some ingredients for a lovely paleo cookie recipe which I saw here: http://www.keyingredient.com/recipes/394546215/fast-paleo-paleo-choc-chip-cookies-paleo-recipe-sharing-site/ I picked up all the ingredients quite easily, except when it came to the coconut oil. I was faced with two choices. One version of the coconut oil looked like this, white in a round little tub: http://cdn2.bigcommerce.com/server4400/q7j1o/products/32/images/145/coconut_oil_1__11610.1352089646.1280.1280.jpg And the other version was in a regular looking glass oil bottle, one you might see olive oil in like this: http://i01.i.aliimg.com/photo/v0/113870995/Pomace_Olive_Oil_Glass_Bottle_.jpg So....I purchased the one in the tall bottle... thinking 'well, it's supposed to be oil... a liquid, not a solid...' But I just went to pour it and it's got a yellow colour..... I fear I've made a terrible mistake!!! (Dun dun duuuun!) It's supposed to go into cookies :/ Should I go back and purchase the other tub of coconut oil? I'd like to make my cookies tomorrow!!! :C please halp!
  4. I saw 2 jars of coconut oil on the shelf at my local market. One was completely unrefined coconut oil for roughly $20. The other listed "refined, non-hydrogenated coconut oil" as the only ingredient and sold for $4. I understand that the raw one would be the top pick but, what I want to know is, how bad is the "refined" one really? I am on an EXTREMELY tight budget and would be grateful to save the extra cash if the less expensive is "almost as good" as the other. What say you?
  5. I haven't read this book yet so I don't know if it is any good but I wanted to share with everyone this free deal from amazon.com. Today "The Coconut Oil Handbook: How to Lose Weight, Improve Cholesterol, Alleviate Allergies, Renew Your Skin, and Get Healthier with Coconut Oil" by Jamie Wright is free to download to Kindle. If you don't own a Kindle (I don't) Amazon.com has a free app called Kindle for PC that you can download and read Kindle books on your PC. http://www.amazon.com/Coconut-Oil-Handbook-Cholesterol-ebook/dp/B00CLUUGDS/ref=sr_1_2_bnp_1_kin?ie=UTF8&qid=1368062468&sr=8-2&keywords=the+coconut+oil+handbook If you have read this book can you give reviews?
