I have four pounds of it in the Instant Pot with some ginger and soy sauce and garlic and sriracha. All the shredded pork will soon be mine. Oh well, I'll put in a way to make up for it. I have basically done well, aside from the weekend, when I totally hibernated. Saturday was a needed rest day. I truly slept a lot, and needed it. But Sunday felt like the wrong sort of hibernating. Meh. And I'm having huge swings of adulting. Huge mood swings in general. My roommate used to do something similar. He'd realize that he hadn't had enough to eat, and then just take a spoon to peanut butter so he had some measure of calories in his system. I was confused as to how that exactly happened for the longest time... But then I got it eventually. Can't remember the time, needed at least forty minutes for that much meat, but it'd help to slice it. The whole thing is a bit large to easily shred in the center otherwise. When shredded, it soaks up its own liquid well. Tonight I have samosas for the first time in decades. But I'm trying to get in the "not everything has to be done every day" mindset of this challenge. Also, I badly needed the sleep. Badly. Another workout this morning. Didn't feel like it. Did it anyway. It was fine by the end. (Though I seem to have a muscle occasionally twinging in my lower back/hip area. This muscle tends to be a lot tighter than the other side, and I can never stretch it out. Something in this workout must be hitting that muscle in a way that tires it. This might be bad, but I kind of feel like maybe it's not. If it's a knot that won't release or a strength difference between the sides, maybe that's good in the long term.) I think I like having a workout in the morning, though I can't tell yet if it's doing what I want. But it seems to create a half hour of wasted time in my morning routine. My routine is an hour long without it, and two hours after adding a 25 minute workout. Maybe I just don't have all the overhead accounted for yet. I made chia pudding in a jar, and let it thicken and self-stir on my commute so I'd have breakfast.
