I... may have too much pork butt. Clearly I was in need of protein and homemade food when I was at the butcher's. I have four pounds of it in the Instant Pot with some ginger and soy sauce and garlic and sriracha. All the shredded pork will soon be mine. Then I need to do something with the other half.

They do like their pork. There's probably no such thing as too much pork there, though.

You could take the Fair Go Dibbler route and make a meat pie floater.

Oh, I'm glad. It's a fun series. I'm mixed on urban fantasy, but this is definitely a good one. It's got some interesting long-term story arc going on.

I'm amnestying my posts for the last few days and relying on Habitica, where I used some gold on seasonal gear, which is not the point of rewards this challenge. Oh well, I'll put in a way to make up for it. I have basically done well, aside from the weekend, when I totally hibernated. Saturday was a needed rest day. I truly slept a lot, and needed it. But Sunday felt like the wrong sort of hibernating. Meh. And I'm having huge swings of adulting. Huge mood swings in general.

And I've started stashing jars of peanut butter everywhere, for when you just need 500 calories ASAP, which happens to me more often than you'd imagine. 

 

My roommate used to do something similar.  He'd realize that he hadn't had enough to eat, and then just take a spoon to peanut butter so he had some measure of calories in his system.  I was confused as to how that exactly happened for the longest time... But then I got it eventually.  And started eating PB with a spoon as well. >.> <.<

I decided that this is what I'm going to do with my pork loin on Friday.  So I require numbers about this. (I am going to have to add some fat, probably as sesame seed oil, maybe some pork belly if I can find it in the store....)

Let's see. My instant pot theory is more flavor and less liquid. About four pounds of meat. Two or three thumbs of fresh ginger, maybe a sprinkling of ground on top of it. I used garlic powder, so either a good sprinkling of that, or maybe four or five cloves. A heavy sprinkle of soy sauce, several tablespoons. Lots of Sriracha, also several tablespoons. Basically cover the top of the pork. I took a trick I heard for kalua pig, and added two slices of bacon, chopped, for smokiness. I found the pork butt had a lot of marbling and a layer of fat, and didn't need extra fat. In fact, it's pretty rich. If the loin is too lean, sesame oil would be nice. I don't think I added extra water; I put the bacon on the bottom so the bottom would fry until the meat released enough liquid to bring it up to pressure. Can't remember the time, needed at least forty minutes for that much meat, but it'd help to slice it. The whole thing is a bit large to easily shred in the center otherwise. When shredded, it soaks up its own liquid well.

 

Nice served with a squeeze of lime and some fresh scallions and cilantro to cut the richness.

Since the last time I did hardcore low-carb, the whole community has discovered a bizarre, easy, and fairly cheap gluten-free dough that seems to work for most things. Tonight I have samosas for the first time in decades. (I've also made pizza, ham/cheese/scallion pasties, and cheese danishes.)

Good news: I had a good workout before work. (I've decided, for brain reasons, to do a daily morning workout until it seems like too much.)

 

Bad news: I was already having morning hunger issues. I brought extra food. But it's still not enough. I've almost finished it all before lunch.

 

Yesterday was a bare pass, but I won't bother recording it more formally.

By Habitica terms, yesterday was a fail, because I did the things that weren't scheduled. But I'm trying to get in the "not everything has to be done every day" mindset of this challenge. Also, I badly needed the sleep. Badly.

 

Another workout this morning. Didn't feel like it. Did it anyway. It was fine by the end. (Though I seem to have a muscle occasionally twinging in my lower back/hip area. This muscle tends to be a lot tighter than the other side, and I can never stretch it out. Something in this workout must be hitting that muscle in a way that tires it. This might be bad, but I kind of feel like maybe it's not. If it's a knot that won't release or a strength difference between the sides, maybe that's good in the long term.)

 

I think I like having a workout in the morning, though I can't tell yet if it's doing what I want. But it seems to create a half hour of wasted time in my morning routine. My routine is an hour long without it, and two hours after adding a 25 minute workout. Maybe I just don't have all the overhead accounted for yet.

 

I made chia pudding in a jar, and let it thicken and self-stir on my commute so I'd have breakfast. That worked well, but totally maxed out my bag's food-carrying capacity, with my bento and my salad.
