I'm back at weighing/measuring my breakfast. Not sure why really. I don't feel like I really have to. And I don't think I'd get as stressed out if it's not exactly right as I would have gotten a while back. I'll see if I can try to eye-ball it more in the future...

My mother in-law had baked saffron buns the day before, so she treated us to one each. And we'd been baking gingerbread cookies all day, so we had a bunch of those as well.

I had been looking forward to the last of the apple cheesecake from the day before all day long. Finally got to eat it!

We spent almost all day baking gingersnap/gingerbread cookies (what are these called anyway?) Sweden They're called "pepparkakor", literally pepper cookies, in Swedish. But despite the name there is no actual pepper in them. The spices used in this recipe is cinnamon, cloves and ginger. Some recipes add cardamon as well (and, mostly in older recipes, there might be bitter orange as well).

 

Anyway, the dough is so so tasty! But I managed to not eat too much of it while baking. But then I lost it with the actually cookies later and had way too many. All in all I probably ate 20 - 30 cookies... Sure, they're really thin, and some are tiny, but still, 20 is too many. Baking these cookies is a lovely family tradition, the house smells great, the kids enjoy it, and so do the adults. We put on some Christmas Carols and really get in the mood of the season :)

In german it's Pfefferkekse :)

Need to bake some "Weihnachtsplätzchen" again this year!

Weihnachtsplätzchen commonly just means christmas cookies.

The common ones are "Vanillekipferl", "Zimtsterne", "Spritzgebäck" and "Kokosmakronen". But there are a lot more :D

The ones you picked are not common here but may be in other regions. The dough for the cookies at the bootom is the dough we use for cutting cookies.

Cup of Four Sigmatic Mushroom Coffee

 

I gave my mom a couple of different types of "coffee" substitutes. She didn't care for it much, said none of them tasted like coffee. This one only tasted mushrooms according to her... I don't drink coffee. I think it smells nice, but tastes like sh*t :P But, since this one apparently didn't taste like coffee I thought I'd give it a try. Yeah, you guessed it. It tasted like crap! (I.e. coffee). Not going to try that one again :D The added mushrooms, "Lion's Mane & Chaga" was supposed to increase creativity. Not sure about that claim... :D

I had one piece of candy, and that was it. Didn't want any more, and didn't have any more. Didn't even have to fight with myself not to eat any more than that single piece of candy Thumbs Up

Bread with cheese

Cottage cheese with apple, cinnamon and almond butter

 

My wife had baked what we call Sweden "Wort bread" ("Vörtbröd"). But in this case it didn't contain any actual wort, just the spices that typically goes with it. From wikipedia: "Wort is the liquid extracted from the mashing process during the brewing of beer or whisky.". Wort bread is typically only eaten around Christmas time in Sweden, and most commonly with cheese or "Christmas ham" on top. We usually make an effort to only buy cheese made from Swedish milk, because we know Swedish cows are treated pretty good. But in this case we had to make an exception and buy a cheese made from Danish milk :(  The reason being that there is no Swedish cheese that is made with this much full fat cream in it. This cheese is 38% fat and really soft and creamy. Typical Swedish cheese is only 28 - 31 % fat. With this bread a really fatty and creamy cheese goes best :)  

 

On one of the pieces of bread I had blue cheese, more specifically it was a Stilton cheese, from England. Again, this is because there is no cheese like it made from Swedish milk :( The strong blue cheese went really well with the spicy bread! Yummy

Sandwiches with various toppings

 

We were invited over to friends of ours for some late breakfast. We brought the wort bread my wife had baked the night before, some butter and cheese. They had the rest. I ate two bread buns. I had liver pate with fresh cucumber on one piece of bread. So good! It's something we almost never have at home, because it's only I who eat it, and it will spoil before I can finish a package :( 

 

Dinner - 18:50

Pan fried boneless pork chops, oven roasted sweet potato with olive oil, garlic, thyme and salt. Pan fried green beans, a salad and Salsa Romesco

 

We had some roasted bell peppers left over from making the Italian salad the other day, so I used it in one of my favorite sauces, Salsa Romesco, which is basically bell peppers, almonds, garlic, chili and olive oil mixed together.

 

Evening snack - 22:30

Freshly baked saffron crescents with almond, butter and sugar filling.

Gingerbread cookies

 

Tried a new glögg. It was flavored with port wine and figs. I liked that it had a really distinctive taste. You could really taste both the port wine and the figs. But if I had to choose, I'd still go with the traditional "Blossa" glögg, which is what I had in the other mug :) 

 

My wife was baking saffron crescents for the first time ever. So once they were out of the oven and had cooled down a bit we just had to taste them :) She had made two versions, one with filling according to the recipe, and one with twice the amount of filling :D I liked the ones with lots of filling! All in all I had four crescents. They're only freshly baked once! I also had three more gingerbread cookies than what's shown in the photo.

I've decided to stop logging my morning walks, and my sleep, for now. Also not (publicly) logging my workouts. Mostly because I don't feel like I need to. I don't feel that I need the extra accountability right now. I'm getting my daily walks in no matter if I log them here or not. Same with my workouts three times per week.

Congrats on reaching that point. Don't hesitate to log it again if the need arises.

Living life as a Druid is about walking with the beasts. It's about being scared, looking your fears in the eyes and going on anyway. Dread doesn't go away, you just learn to know it. It's still a beast, it still has fangs, but you walk among it.

Gingerbread spice latte and wortbread with cheese

 

That latte was really tasty!

 

1 egg
1 tbsp coconut oil (flavorless)
1 ml vanilla powder
½ tsp cinnamon
1½ ml ginger
½ ml cardamon
½ ml cloves
2 dates (small)
2 dl milk

 

Blend everything together except the milk. Bring the milk to a boil, and then slowly pour it in to the blender. Don't add it too fast or the egg will curdle!

 

What you see in my cup above is half of that recipe. My wife had the other half, and she really liked it as well. Don't get put off by the egg or the coconut oil!

French gingerbread cookies, cardamon shortbread cookies, various candies and store bought gingerbread cookies

A cup of glögg

 

My wife baked a batch of "French" gingerbread cookies, and crumbly cardamon shortbread cookies. Of course we wanted to taste them for our evening snack :)  And I had a few different kinds of candies I wanted to taste as well. But to be honest, when you have home baked goods to compare to, the store bought candy is pretty disappointing!

 

And those "French" gingerbread cookies - I have no idea how French they actually are, but that's what we call them. They also go by the name "Sliced gingerbread cookies" or "Cut gingerbread cookies", because that's how you make them. You roll a "log" of the dough, freeze it for a while, and then just cut slices with a knife and bake it for a few minutes in the oven.

Tried a different mix of mushroom coffee. This one was Cordyceps & Chaga

 

I'm not sure if it's because I'm getting used to it, or if this was a little bit milder, but I thought this was easier to drink than the last one I tried. Still not something I ever want to drink again, but it was a little bit easier to finish this cup than the last one I had :)

Rolled oats mixed with cinnamon protein powder and grated carrots. Topped with cottage cheese "frosting", grated carrots and roasted pecans (and one walnut :P). This was really good! Will make again!

Mulled wine, saffron crescent bun, Swedish gingerbread cookies and French gingerbread cookies

 

Sweden December 13 we celebrate "Saint Lucy's Day" or "Feast of Saint Lucy", but we just call it "Lucia". The traditional saffron buns (I've shown them before, rolled with raisins) are actually called "Lussebullar", or "Lucy Buns" in Swedish. "Everyone" in Sweden eats at least one saffron bun this day. A lot of workplaces even treats their employees to saffron buns on Saint Lucy's Day.

I was buying some meat at the butcher shop, and sampled a small piece of their liver sausage and their "chopped sausage". I've tried the latter before, and it's really good. But I've never tried any kind of liver sausage before. Can't say I was a fan. At least not eating it cold like I did now. I really like their liver paté though Yummy (But didn't have any this time)

We had a birthday party for my oldest son. As the guests arrived we served them mulled wine sangria and gingerbread cookies. (Forgot to take a photo of the sangria before it was already almost all gone.)

 

My son had asked for tacos, but instead of regular (Swedish) tacos, I wanted to try a new recipe I had found of "taco cake". Basically you just layer tortillas with tex-mex flavored minced meat, salsa, and a mixture of crème fraîche, heavy cream, cream cheese, grated regular cheese and sweet corn. Top it off with grated cheddar and bake it in the oven until the cheese is golden brown. Everyone loved it! :D 

 

For dessert he wanted carrot cake. So we had that, and nine different kinds of seasonal cookies/candies

 

I tried really hard not to overeat. And I think I did pretty well. I didn't have any of the gingerbread cookies and only a small glass of the sangria. Since I had pretty much skipped lunch I was pretty hungry, so I did have two helpings of the main course. But then for dessert I only had a small piece of carrot cake, and a single saffron candied almond.

I just had a tiny piece of cake for lunch.

 

My oldest son wanted a birthday party with all his friends, so we rented the gymnasium/gymnastics room/PE room/whatever you want to call it.

We had various competitions the kids got to do, and then they all just got to play around with whatever they wanted. After about an hour and a half of playing around it was time to serve some food. My son had wished for hamburgers, so that it was.

For dessert he wanted a Roblox cake. So my wife got up really early (6 am) this morning to bake a regular "Pricess cake" for him, but with Roblox themed decoration :) 

 

Again, I fought really hard not to overeat. My plan was to not eat anything at all, but as I was slicing up the cake to serve all the kids I couldn't resist, so I cut a tiny piece for myself as well. Didn't have any burger though because we were going to another party later that afternoon where I knew they were going to serve plenty of good food!

That limoncello mulled wine mixed with prosecco was really good! But to be honest I think it was even better enjoyed with almonds and raisins without the prosecco. After a few glasses of that stuff though, I was really starting to feel the alcohol! It was pretty strong at 15% alcohol...

 

As the alcohol enters my body, my (food-) judgement and willpower exits... 

 

So I had three full plates of all the food :( And after food they started serving pure limoncello (30% alcohol). And that really knocked the last of my judgement out of the window. So I really over ate of the dessert after that. To be honest I can't even remember how much I ate... I just know I ate until I felt really sick. And then I passed out in one of their beds. After a while my wife found me. Mad as a hornet she woke me up and told me it was time to leave... Of course I don't blame her for being angry with me. That's no way to act at a party. But after using so much willpower to not overeat at my own sons birthday parties the day before and earlier that same day I just didn't have it in my to force myself to not eat (and drink) all the things once again! :(

My wife was preparing bags of popcorn for movie night with the kids. I had a small handfull of popcorn. Maybe like seven popcorns. I felt bad about eating them, because it wasn't planned, but it smelled so good when she was popping them I wasn't strong enough to resist them.

Pumpkin pie with whipped cream

The other day I made hazelnut toffee for my mom. Tonight I wrapped them all up in paper. When doing so I trimmed off the end pieces, and not wanting to throw any food away I had some of them with my evening sweets (me wife had the rest). Also had some whipped cream in the fridge that needed eating, and I knew I had a piece of leftover pumpkin pie in the freezer, so I thawed that out to have with the cream :)  And then some mulled wine and two pepper/ginger nuts.

 

After finishing that plate, and the mulled wine, I really felt like I wanted some more of the (alcohol free) mulled wine. But I didn't want it on its own, I wanted something to eat to go with it. But I couldn't decide what I wanted to eat more of. My wife and I was watching TV while enjoying all the delicious sweets. When I had finished eating it was probably like half an hour left of the TV show. And for all of those 30 minutes I was thinking of how much I really wanted some more mulled wine. But as soon as the TV show was over and we went to do other things I forgot all about the mulled wine, and it wasn't until later, when I was getting ready for bed I realized I hadn't thought about the mulled wine for a long while. So I guess I didn't really want it that much after all... Good thing I didn't just cave in to my cravings, since they obviously were wrong!

Sweden This is a traditional Swedish meal, served both for breakfast, lunch, snack and dinner. You boil short grained rice with water, milk, butter, sugar and cinnamon. Then you serve it with even more cinnamon, sugar and milk. Considering how sweet it is this would be served as dessert in any other part of the world, but here it's a perfectly fine meal any time of the day. The official Swedish name is Sweden "Risgrynsgröt", literally "rice grain porridge". But it also goes by the name "Santa porridge" or "Christmas porridge". It's traditionally combined with wort bread topped with Christmas ham (and mustard). But we didn't have any Christmas ham, so cheese would have to do (also really tasty!).

 

We do serve rice pudding as a dessert, but then we fold it in with stiff whipped cream, flavor it with vanilla, and serve it cold topped with a fruit or berry sauce. This is called Sweden "Ris à la Malta"

Had the last of the saffron buns :( Need to bake more of them! As a small experiment I cut the bun open and added some almond paste inside the bun. That was really tasty! I think I'll do that with all buns next time we make these crescent buns :) 

I baked some thumbprint cookies that I'm bringing to the Christmas buffet. But of course I had to taste them :) The plan was to only have one, but I ended up eating three of them... Oops :)

We do this too but here it's just "Milchreis" (milk rice). Most of the time with sugar and cinnamon but sometimes with cherries (not fresh ones but cherries in a jar).

That's really interesting. Maybe a good lesson to learn from that is to sit with our cravings for a while, rather than immediately fulfilling them. I heard somewhere that the standard craving lasts for 20 minutes, and then fades. Yours went a bit longer, but then you were also not changing your environment for that time period. So maybe getting up and going for a short walk (or even just into another room) or changing your activity for a little bit would be a good test: am I really hungry for this, or just craving it for other reasons? If that desire still hanging around after a bit, then go for it! ;)

 

At least, that's the mindset I'm thinking of adopting. Especially with all the Christmas treats in the office right now... I find myself craving (and eating!) a lot of carbs, but if I examine the situation more closely, I'm often not hungry at that moment... so I think it's more of an emotional response than an actual hunger. So I'm trying to do the zen thing of observing my cravings/desires without judging them or acting on them, and seeing what happens.
