1.5 bowls, and closer to my lunch meal than usual, but as I said, didn't have as much for lunch as I would have wanted. Had broccoli in this batch. Not a bad choice! :) Perhaps mainly because it was a bit of a change in taste and texture ;)

Was even more hungry after dinner, so I had a small bowl of kitchari in front of TV. My wife again went for the sweet stuff. Yesterday wasn't too bad, she had sweets I don't like too much. But tonight she had cinnamon buns and gingerbread cookies. I'm generally not a super fan of cinnamon buns. But the smell in the kitchen when she thawed those in the microwave oven was so nice! Really made me want to have some. And as you probably know by now, I'm a sucker for gingerbread cookies :) And it's not even that I didn't enjoy my bowl of kitchari, I still find it tasty. And if my wife hadn't gotten the sweets out I wouldn't even have thought about having that. But smelling the scent of the cinnamon buns, hearing the crunch as she bit down on the cookies. Man, it really made me want to have some sweets too :) I wouldn't ever want to live without her, but in cases like this, living alone would have been so much easier :)

Thanks to @Arkania I realized that I had forgotten to add cilantro to my kitchari. Didn't have any fresh cilantro, so I used all the frozen we had (not enough) and dried cilantro as well. Nothing even comes close as tasting as good as the fresh stuff, and to be honest, the dried cilantro is pretty horrible in comparison. But I'm the only one in the family who likes it, and I can never finish the fresh cilantro before it goes bad. So I very rarely buy it.

My recipe called for ½ inch fresh ginger. Some other recipes call for up towards 2 inches of ginger. So to this bowl I added some dried ginger, just to see how it would have tasted with a bit more ginger. It was alright. But I might have overdone it a little bit :D It tasted almost only of ginger :D But a little bit more than ½ an inch wouldn't have hurt.

 

This was the last bowl of kitchari. Absolutely not tired of it yet Thumbs Up

Finally tea again! Best part of going off the kitchari cleanse/detox/reset/whatever :) 

My wife and our friends had chocolate cake with raspberries and whipped cream, but I wanted something a bit more healthy.

My wife had more of the chocolate cake etc, and I wanted ice cream, cinnamon buns, gingerbread cookies, whipped cream, berries, banana... But I got to my senses and had a protein microwave cake instead with some fruit. Now that I had been good for so long with my mono-diet I didn't want to go all out on the sweets the very same night I stopped with the kitchari :)

Did you happen to get the recipe for the salad that your friends made? It looks really good! :O

Probably smart, since the whole point was to reduce sweet cravings! :P

Yes. If *cough*someone*cough* didn't constantly tempt me with eating sweets things right next to me I don't think I would think about the sweets at all. (I say this in a really loving voice :wub: - I truly don't want to deny anyone to eat whatever they please just because I have problems with food)

Yes. I'm actually thinking of making it again tonight. We'll see. Definitely a good snack option if/when I feel like something protein heavy. Nice variation on just drinking the protein powder with water.

Pak Choi salad

 

10 oz pak choi (two heads)

5 oz sugar snap peas

1½ carrots

 

Slice the pak choi crosswise. Thinly slice the peas on a long diagonal. Thinly slice the carrots with a potato peeler or mandolin. Mix and serve.

 

They also had a soy based dressing that went really well with the salad

 

 

Salad dressing

 

1 lime
1/4 cups Thai sweet chili sauce
1 fl oz Japanese soy sauce

 

Stir together both zest and juice from the lime with the sweet chili sauce and the soy sauce. Drizzle dressing over your salad.

So this is that kefir that I showed in the first photo, but after stirring/mixing it together and straining it through a fine meshed sieve, and then combining it with quark, mixed frozen berries and chopped Brasil nuts and almonds

Had friends over tonight as well, and again, they brought food. But this time it was just pizza with tomato sauce, cheese and ham (and pineapple for the kids), and Swedish pizza salad. I had prepared the broccoli, our friends didn't bring that.

Celebrated dad's birthday. This was the food he chose, and it was super tasty. A favorite meal from my childhood actually :) Tasted much better than it looks on the photo.

Still at my parent's place, and this is what mom made for lunch. I would have preferred a more "proper" meal with meat/chicken/fish and vegetables. But this is what was served, so that's what I ate. And I can't really remember anymore, but I think I had another serving with more pancakes.

I was craving something, but couldn't figure out what it was. Then I randomly saw an add for dill pickles, and immediately ran to the fridge to have one :P After that the craving, for whatever, went away. Salt maybe? I have no idea...

Last of the leftover bok choy salad! And to be honest I really struggle to eat with the chop sticks :D I need the practice! I know I'm holding them wrong, but whenever I try to hold them the right way the lower one just keeps slipping off of my ring finger :( So what I do is keep it on my middle finger, but that leaves just my thumb and pointer finger for the top chop stick, so I don't get as much control as I would like...

Miscellaneous

 

So, about the Semla. A friend of my wife's was coming over, and offered to pick up a semla in a bakery on the way here. But both my wife and I are very picky when it comes to semla. The ones you buy always disappoint. So instead, my wife baked her own for us! :D

 

Sweden A semla is a wheat bun made with a yeast dough that is flavored with cardamon. You then cut off the top of the bun and, using a spoon or a fork, you remove some of the bun in the bottom, creating a hole that is filled with almond paste mixed with some milk and the bun you removed. On top of that you put whipped cream. And then the cut off top. Finally the bun is dusted with confectioners sugar.

Above you see what a semla looks like when cut in half.

 

Normally when you eat a semla you take the lid off, scoop up some of the cream with the lid, and eat that first. Then you eat the rest of the bun with the almond paste mixture and the whipped cream. But then you get only bun + cream when you eat the lid. So what we like to do, and that you can see if you look closely enough, is to put some of the almond paste mixture on the underside of the lid of the bun. That way you get the full semla flavor experience also when eating the lid :D We also like to flavor our whipped cream with some sugar and vanilla. And the almond paste should be home made, with parts of it made with roasted almonds. It's also important not to make it too smooth. We like it when you get a little bit of crunch of bigger pieces of almonds (but not too big!). It's also important to have some bitter almond flavor in the paste.

 

The bun itself should not be too fluffy. When you buy a semla at a bakery they usually get this part right, but when you buy just the buns in a grocery store, and fill them yourself they are always too fluffy. On the other hand, when you buy a semla at a bakery there's a big risk that the bun is too dry, because they make all the semlor early in the morning, and then they sit out all day before you buy it... And they often cheat with the almond paste and add apricot kernels because that's cheaper than almonds. But it also doesn't taste as good! And the cream is usually whipped too stiff, and overly sweetened.

 

Lot's of things that can, and will, go wrong when buying semlor instead of making them on your own. That's why we take the time to do them ourselves! Yummy

Blanching almonds for the almond paste

Almond paste. Made parts with blanched ground almonds, and parts finely chopped roasted almonds with the skin still on them. Mixed with sugar and a tiny bit of water.

 

Before filling the semla you mix the almond paste with the bun that you have removed to make room for the filling, and some milk to get a creamy consistency

Ooh, semla kind of sounds like a Swedish version of a cream puff. But nicer, because it's impossible to eat cream puffs without making a mess, and I always feel like they're missing something, flavor-wise. Maybe it's almond paste. :)

I leave the yeast baking to my wife, but I gladly do everything else. I don't mind spending an hour or two baking semlor, they're so good they're worth it! Just come here, and ask for them, and we'll make you one (or however many you want ;)). I've looked up a new recipe for the buns that I think will be even better. Can't wait to get an opportunity to try it! (Still have two un-filled buns in the freezer from the first batch that we need to eat first.)

Post-workout smoothie

 

Same recipe as last time, but this day I made it in our food processor instead of in the blender. In the food processor it gets an even thicker consistency. Even more like soft serve ice cream than in the blender. But it also doesn't get as smooth. There are still noticeable pieces of both oats, ice and frozen banana.

 

Only had these two things to eat today. Was still feeling a bit bad about all the semlor I ate the day before, so I compensated by eating less today...
