Zoats made with a steel cut oats porridge mix. The mix has dates, hazelnuts, pumpkin seeds, steel cut oats and some other things in it. Also added three egg whites to my zoats.

Let the shiitake mushrooms boil a bit in the miso soup base to soften up a bit. So today it was even better than last time I had it :)

This was super tasty! (No wonder with all the cheese, and the heavy cream in the tomato sauce :D)

That coconut quark had been sitting in my fridge forever. The plan was to use it for overnight oats. But I never got around to making them, so I just ate it like this instead.

Because of all the cake yesterday my plan was to skip breakfast today. But when I woke up my wife had baked bread in the morning. So I had some of that together with the rest of the family. I just knew I would feel sorry for myself if I turned down the still warm, fresh out of the oven, bread. If I didn't eat it I would just spend the rest of the day, and several days after, obsessing over how tasty it would have been to eat the bread. So instead I had two pieces, and hated myself for being too weak to just say "no". And hating myself for eating too much cake the day before, and too much fatty and sugary bread toppings/spreads today.

Home made burger

 

Yup, leftovers from my son's birthday yesterday. After the photo I put a big piece of lettuce on top and ate it like that, with lettuce instead of a piece of bread on top. As I wrote last time, we used bought burger buns, and they're not very good. They're too compact. So with two pieces of bun they take away too much of the flavor of the actual burger. So half a bun is perfect :)

Last of the wild boar meat :(  It's been so tasty! Or, actually, I think it's the cream sauce/gravy that's been the star of the show. Sauce/gravy is what I miss the most when trying to eat healthy. A lot of "healthy" recipes are so dry! :(

Turkey bacon, keto egg noodles, skinny cauliflower alfredo sauce, salad.

 

Yay sauce! :D And the turkey bacon was really good too. Never tried that before. I've had regular bacon (duh!) and chicken bacon, but never turkey bacon. Obviously it's not a proper replacement for the real deal, but for some smokey tasty meat it was great Thumbs Up And between chicken bacon and turkey bacon I'd go for the turkey :)

That was a lot of logging but it all looks scrumptious. I'm especially fan of the chicken stir-fry from January 23rd. I think it's the colour, the corn and the tomatoes. It's about the small things, sometimes, and you really rock both cooking and plate dressing.

Doesn't change a thing. In my head, you are now some lost prince in exile trying to hide his identity and doing a terrible job of it. I hope the evil tyrant who overthrew your father isn't trying to level up his life or you might very well be toast. Come knock at my door if you need asylum, I've been told we're good at that (though "used to be" would be more accurate nowadays). ;)

Roasted broccoli, bacon wrapped water chestnuts, chili cheese filled jalapeños, home made tortilla chips, jalapeño beef patties, sweet corn, salsa, tzatziki, habanero tater tots

 

Had my dad over, and both he and I like chili spiced foods, so I made some kind of chili themed tapas for us to share :) Super yummy, but a lot of work :)

The perspective makes it look smaller than it is. It's basically the same size as that tea mug :) 

 

I tasted a small bite of the muffin, and it tasted good, but I wasn't very hungry, and I knew I'd be eating my fair share of food the day after, so I didn't have anything else to eat this day. Plus, I find muffins pretty dry and boring. I need some kind of sauce, or ice cream, or something to add some moisture.

Spent all day in Gdynia, Poland with my dad. This trip was a Christmas + birthday present from me to him. A 36 h cruise to Gdynia for a home cooked Polish dinner with vodka tasting :)

Boiled potatoes with a small dash of pan sauce from the meat

 

OMG! That roast, not to mention the plums! So so good! Yummy

 

Tasted several different kinds of vodkas, both flavored and pure to this dinner.

A very sour, very strong vodka, diluted with filtered water.

 

This was the only disappointment the entire day - no sweets for dessert :( 

 

Getting back to the ferry back home I looked through all the bar/café/restaurant menus on the ferry, but none served anything sweet that I fancied. (Mostly chocolatey stuff) But I had quite the sugar craving, so didn't really know what to do. Didn't want to settle for some totally underwhelming candy from the store... I walked around for a bit, and then I bought a diet soda. That actually tied me over until I could fall asleep. That, and the thought of having something sweet I truly enjoy at home the day after instead.

Salty, buttery, crackers with melted brie cheese and cloudberry jam

 

Leftover from when I had my coworkers visiting me. Very tasty :) So I skipped breakfast on the ferry because I've had it several times before and I knew I'd just end up overeating poorly made pancakes with jam and whipped cream, and then feel like a failure afterwards. So I went home and had tasty leftovers from the fridge instead :) Now, the crackers did leave me with a craving to just eat more and more of them, but I did managed to stop myself from that. So in the end it was all good :)

Cottage cheese pasta, cauliflower alfredo sauce with chipotle chili, pan seared smoked tofu, side salad.

 

Sweden "Vegetarian day" in Sweden today. So to mark the occasion I switched out the bacon I've eaten with this for some smoked tofu instead. I also changed the seasoning of the sauce a bit to keep it interesting :) 

 

This cottage cheese pasta was a new recipe that I tried. I've made similar pasta several times before, but not this exact version. I liked this version, and the taste was great. But there are some improvements I can make in the recipe to make it easier to work with, and to hopefully improve the texture of the pasta a little bit. I love tweaking recipes to make them better and better :)

Meat bolognese on top of soy bean spaghetti, topped with parmesan. Side salad.

 

I made that bolognese sauce, and, if I may say so myself, it turned out really really good! The soy bean noodles where good too. I have a little less than one serving on my plate, but I felt that was too much. I would rather have had less spaghetti and more sauce. But I liked the noodles themselves. Good taste, good texture.

I made Swedish curd cake ("Swedish cheese cake") for the birthday party we're going to the day after. I started preparing them late the day before (Friday), but they take a looong time to make! The first photo is taken at 4 am and the last photo is taken at 6 am! My wife just shakes her head, thinking I'm crazy staying up all night just to bake a cake :D

The taste was great, but even though the gratin was made with whole cream it was still a little dry. Chicken breast really needs a good amount of sauce!

Sandwich cake

 

This is what they served at the birthday party at my wife's parent's place. We were celebrating both her brother and her father.

 

Sweden I think I've written about the Swedish food "Sandwich cake" before. But basically it's white bread layered with a mayo/creme fraiche mixture with some flavorings. Then it's all topped with ham, shrimp, eggs, salad, fruits(!) and vegetables. I tried to go easy on all the layers of bread, and concentrate on the toppings :)

The omelette broke a bit, because it stuck to the pan. But it was still delish! :)

"Really wished I could have eaten the whole half banana that was left, but I was too scared that the total kcal of the meal would be too much"

 

I know that's my eating disorder talking, and that's exactly the kind of thoughts I want to get out of my head!

Rice pork sausage, mustard, dill pickle, green beans and dill bechamel potatoes.

 

Sweden That kind of sausage is a specialty from where I've grown up. Love it! And the boiled potatoes in the dill bechamel sauce is the traditional side to go with it. You're also "supposed" to eat it with pickled beets, but I didn't have any, so I went with pickled cucumber instead. Mustard is also a traditional thing to have with the meal, but I felt it took away too much of the delicious flavor of the sausage, so I didn't eat much of it. To be totally honest I can eat that sausage straight up as it is because it's so good! :)

I had made plans to make an omelette for dinner, but by the time I got around to eat something it was too late and I didn't feel like having a cooked meal. So I went for this instead. That granola had just come out of the oven. I made it for my wife, but wanted to try some of it myself too.

Made a big omelette out of six eggs. I had half of it, my wife had the other half.

The recipe I used for inspiration said to top it with one table spoon of sauerkraut, but who only eats one tablespoon? Can you even taste it when it's so little? The whole reason I made this omelette was because I wanted to try my own home made kraut. I had made one plain and one flavored with caraway, brown mustard seeds and white pepper. Then I also had a commercially made sauerkraut. And to be totally honest I preferred the bought one :(  It's a super expensive one that isn't pasteurized. It's flavored with caraway and juniper berries. Ohh well, I guess that's even more reason for me to practice and make it again :)

Rice pork sausage, sauerkraut, mini tomatoes, cucumber and dill bechamel potatoes

 

OMG! The kraut was perfect with that sausage! Match made in heaven Yummy
