Don't you also put raw onion in gazpacho? At least I put them in the bastardised version that is a combination of several recipes online. Like, 1-2 onions for 2 people?

At home we use raw garlic, but no onions. Sometimes we will mince some to add as a side, but not usually. I guess is just a matter of taste.

Still, I don't think Endor eats onion-based gazpacho every day :D

Fair enough. I usually use both garlic and raw onion, as do most dutch recipes.

 

Can't we re-brand gazpacho as a savoury smoothie? It's basically a ton of vegetables with bread and plenty of olive oil; I think you can even drink it without a spoon. Due to the olive oil, it even has the same amount of calories as regular smoothies :P.

It's quite common. We call them ajetes or ajos tiernos here.

They're super yummy! They're not super common in the U.S. but I used to go to a farmer's market that sold them when they were in season. They're delicious chopped up in egg salad!

To be fair, after eating spicy food I can always smell again. Maybe it works the same with the sulphuric acid in raw onion?
