CourtnieMarie
Week 1 – Monday spent most of the day sitting on my friend’s porch just relaxing and having a couple drinks. we got home, unpacked, and prepared some quick bfasts and lunches for Tuesday’s work day. we made a kale salad and ordered pizza for dinner. it was quite pleasant. was asleep before 9pm and slept for 9 hrs! Week 1 – Tuesday hectic work day since I probably should have done some work over the weekend. oops. visited my dad and met with a couple of the admin folks there. got to sleep a bit late after dinner was all said and done. we made an old recipe we used to enjoy, chicken thighs baked in maple Dijon sauce and that same kale salad from Monday night (kale, Italian dressing, feta, craisins, sunflower seeds). the thighs really need to broiled after though to crisp up the fatty pieces. blech. it probably didn’t help that we used a smaller baking dish and had to squish the thighs all in there. Week 1 – Wednesday slept in again and only got a quick 4 min yoga flow in. work was super productive and even got a chance to make sure all my dad’s bills were paid for this month. I got a load of laundry in and did my yoga while that washed. swapped it to the dryer and started cooking dinner – a curried broccoli soup with sausage! stayed up a bit later than I wanted to talking on the phone about home insurance. we kind of have a plan in place and hopefully will choose one today or tomorrow.
