Roasted from frozen chicken thighs (with Brussels sprouts, and sweet potatoes)

Hey guys. I had this one for dinner the other day and wanted to share.

 

Ingredients:

 

6 frozen chicken thighs. 

2 lbs. Brussels Sprouts - cleaned and cut in half

3 sweet potatoes - scrubbed and rinsed and stabbed with a fork a few times (or however many you want...throw more in for left overs.).

Seasonings (Olive oil, salt, paprika, nutmeg)

 

Method

 

1) preheat oven to 425

2) place frozen thighs in a baking pan and sprinkle with salt and paprika.

3) wash your chicken hands! 

4) add Brussels sprouts to another baking pan. Drizzle with olive oil and salt. Toss 

5) open oven and place chicken on the lower rack and sprouts on the higher rack. Add your sweet potatoes either on another pan or foil to catch spills. 

6) cook for one hour, checking on color of Brussels sprouts. I like mine with a black crust on them.

7) Chicken is ready when temperature reaches 165. At this point a fork will insert easily into the meat and it will pull apart from the bone readily.

 

Sit back and enjoy, now instead of defrosting your frozen chicken, just let the oven do the work aobyou sing Let It Go a dozen times while no one is looking!
