Glad you had a nice weekend. Sorry about the knee and the long wait for the PT. What about Dr googling some PT excercises for your knees and starting those. Obviously, not pushing too hard. But maybe just so you feel like  you are working toward a goal with them.Also, maybe picking a specific stretching or mobility goal (ie forward fold , reach your arms behind back and touch, or something else that sounds interesting)

^ those are great plans. Also: focusing on pull-ups or other arm-related movements (presses, shoulder workouts) - things you can do seated or lying down. Swimming is usually good for knee rehab, and I’m always a big fan of light yoga, though you may want to wait until you see the physio for that one.

Injuries suck.

Maybe now is a good time to look at something like parallettes or rings or handstands. Something that might keep your interest better than stretching and push ups. I think learning a new skill, even if it isn't the most active skill, can help keep you moving and hopefully motivated.
