Howdy all, thnx for checking in.

I'm hanging in there. Been a little blah the last couple of days, but got in a good handstand workout this morning so I'm starting to feel a bit better. Food was pretty bad the last couple of days... but I'm hoping I can make it better today.

 

I'll try and make a better post later, but have to get breakfast started for the family, I found a congee (or look if you prefer) recipe that I am loving. I've got a good bit of pork stock I've made and it makes a great congee. My wife went shopping yesterday and got some mushrooms, so it will be even better today. Here is my adapted recipe:

  • 3 cloves of garlic, minced
  • 2 inches minced ginger
  • 1 table spoon coconut oil (or any vegetable oil you have on hand)
  • 2 splashes toasted sesame oil
  • (optional) 1 teaspoon anchovy paste

Heat those up in a big pot just until you can really smell the garlic and ginger but well before they get any color. To that add:

  • handful of sliced mushrooms (shiitake preferred but button mushrooms would work as well)
  • 1 cup of rice

Saute that for a good minute or two to get them started cooking and so the mushrooms start to release their water. Then add:

  • 6 cups stock (veggie, chicken, fish, or pork)
  • 2 cups water
  • a good teaspoon and a half of fish sauce (if you don't have that, soy sauce or even Worcestershire sauce)
  • Depending on your stock,  rice wine vinegar (or other vinegar) to taste

Bring to a boil and then drop heat and let simmer for at least an hour. Serve in a bowl or big cup with chopped scallions, crispy fried shallots (if you have them, sadly, I do not) and hot chili oil (or substitute some cayenne pepper or tabasco to taste.)

 

It is very satisfying, and making it with the bone broth I have makes me think it is incredibly healthy (whether or not it is, I like to think it is!)

It is. I need to figure out a good way to make a huge batch of broth to freeze into portions so I can have it a couple of times a week.

Another quick update. Just finished a morning run with the older daughter. We had been skipping running for a bit for a few reasons... none of them particularly good :P

But it really felt good to get out and run a bit. It is almost time to start thinking about the next challenge... I'm liking keeping it flexible, but know I need to start having a little more accountability so I don't completely start to backslide.

I'll have to think on that.

The next challenge conundrum is in the air!    LOL.  I see where I am solid, but adding new things to the list also seems like over-doing it lol.

Holy cow! It's over already? Where did the time go? What is time?

 

How did we do?

  • Run every other day - Meh, mostly did this but made a few excuses along the way

  • GMB Vitamins 3 times a week - Nailed this one pretty well

  • Fill my rings every day - Missed my exercise ring by 2 minutes one day, but didn't sweat it

  • Eat mindfully and healthfully - Started strong, ending on a whimper...

  • Work a reasonable number of hours in a day when working from home - Once I get into the rhythm it worked out pretty well

Given what I wanted to do and how crazy the world is right now, I think I did okay. Now to figure out the next challenge...

 

Thnx all for being here, and sorry I had no crazy story updates, maybe that can be a focus next challenge...

Nicely done GoodDoug!      You got a lot checked off despite the struggles of the time and old foes!   That's really awesome!

 

Glad that you also see the effort as being pretty okay!  (Though I'd mark it up a grade or two into 'Darn Tootin' Good!')
