We are doing phone calls for our patients with covid (either calling the patients in their rooms or calling family if we don't get an answer). Normally we split that up, but since it was my first day back after being sicked I asked if I could do all the phone calls and therefore be in less in-room patient visits, and my boss agreed. Work was therefore fairly easy. I'm feeling fairly well. I did a forward fold and a squat in the morning, and realized that was enough given my body's signals. Did some stretching in the morning, and cooked before coming in to work. I seasoned a london broil with Himalayan pink salt, pepper, and olive oil on both sides and let it set for 20 minutes. I grilled 4 min a side, rotating 90 degrees halfway through each side so I could get crosshatch grill marks. I thin sliced it. I had already made a topping of chopped pineapple, minced red onion, pineapple juice and teriyaki sauce and served that over the meat. The side was brown rice with steamed snap peas with some sesame oil, salt, and garlic powder. It was good. I love pumpkin baked goods, but I feel like the pumpkin spice trend went too far last year. Everything was pumpkin spice, and y'know... not everything needs to be pumpkin spice flavored. I don't blame you, I feel like we feel about summer the way you feel about winter, and the converse is almost true. Fair. The A/C guys are done and the unit is blowing cold air. The condenser outside is so quiet I can't hear it running unless I'm by the window, and even then the neighbor's unit is louder. The indoor unit is quiet as well, though it moves so much more air that I can hear the air being sucked into the intake. It's blowing colder too. It's also way more efficient than the old system, being over 30 years newer. Another bonus, the air filter is a standard size. I was having to special order filters for the old unit. No workout today, but I plan on one tomorrow. Tanktimus the Encourager Posted August 6, 2020 Author Report Share Posted August 6, 2020 Dinner was really good. I cooked some Farro and put it in bowls. I also cooked some chopped chicken thighs with some avocado oil Greek Seasoning, and balsamic vinegar, browning the chicken a little. I put that into the bowls. I also put some halved grape tomatoes in the bowls, as well as some sliced seedless cucumbers. In my bowls (plural because this included what I had for dinner and what was set aside for a future meal) I put pitted kalamata olives, and in all the bowls I put Feta cheese. I dressed it with a mixture of 3 tbsp olive oil 2 tbsp balsamic vinegar, and 1 tsp of that Greek Seasoning (it was a mix, including salt and pepper). I just got some natural peanut butter and added cinnamon, cloves, nutmeg and allspice and stirred. BOOM. Since It was my first time with the bell in over a week I didn't want to over do it. Was kind of low energy all day as I was still fighting off the last of whatever I had. I did get curtains hung in the baby's room, which went a lot better than when I usually hang curtains. Sra. Tanque cooked dinner and did a really good job. I also got groceries. A coworker is still out, so we are adjusting our schedules. For example, I'm working 7a-3p instead of 3p-11p (better, except for getting up quite a bit earlier, but worth it to be home in the evening). I'm also working Sunday, which isn't normal, but with just having had a new a/c system installed the extra hours (I normally work 32/week, this will make it 40) are welcome. Tanktimus the Encourager Posted August 8, 2020 Author Report Share Posted August 8, 2020 Today is a good day. I much prefer coming home after three to leaving for work before three. I did get up at five this morning and had to get ready for work somewhat quickly, so no workout yet. It's a stretching day, and I won't push to hard tonight when I do stretch. I'm still shaking off the lingering effects of whatever this was that got me down last week. When I got home, I sat for a bit with my family, then I cooked. I sprinkled sea salt, fresh ground pepper, and thyme on some pork tenderloins then baked them at 425 for 25 minutes (the recipe called for 20-22, but I know my oven and I always have to add a little to the cook time). I made a salad with a seedless cucumber I cut into quarters then sliced, three tomatoes I chopped into cubes, a package of mozzarella pearls, some dried basil (Ok, plenty of dried basil), and some balsamic vinaigrette. That wasn't enough balsamic, so I added in just a little more balsamic vinegar. It was the right call. When the pork came out of the oven, I made a sauce for it while it cooled. I took 1/4 c olive oil, 3 tbsp balsamic vinegar, 1 tbsp maple syrup, some salt and pepper, and some minced garlic. I let it come to a boil then lowered the heat and cooked it for a few minutes, stirring frequently. I turned off the heat but left it on the burner (electric stove, so it retained plenty of heat) and cut the meat, serving the sauce over the meat on the plate. It was heavenly. Then we gave the baby a bath which involved no screaming, I think we have finally cracked the code. Once I rinsed the shampoo out of her hair she was clearly done, however, standing up in the tub to be picked up. Sra. Like Snarkyfishguts said, I hated getting my face wet as a kid as well, and as a result was late to learn how to swim because of it.
