There were some mixed veggies on the side. The main star was the salmon and the sauce. The salmon was skin-on filets that I seasoned with salt and pepepr. I cooked them skin side up for five minutes in avocado oil, then flipped them for another five minutes. Doing it this way gets the skin nice and crispy. I didn't even know you could eat the skin til Sra. Tanque showed me while we were dating. The sauce, however, stole the show. I melted 2 tbsp butter in a sauce pan, then added about 1 c heavy cream, 1 c parmesan, and 1 tbsp garlic paste. I let it come to a low boil then simmered for five minutes. When it was done I added in some fresh chopped basil. It reminds me of back when I was a kid with Shasta sodas too. haha I went to college not far from the birthplace of Dr. Pepper, which is Dublin Texas. It's not named after the Irish Capitol, it's because the town had two Inns, which led to Double Inn, which got shortened to Dublin. Up until a few years ago you could purchase Dublin Dr. Pepper, which was made with pure cane sugar and not High Fructose Corn Syrup. Today is a good day. I did the NF Prime Mobility Challenge workout in the morning and went to work, where I was tired. Dinner, though, was amazing. The night before I prepped the instant pot for the meal today. Last night I Put 2 lbs of stew meat (beef) in a plastic bag with 1/4 c paprika, 1 tbsp flour, salt, pepper, caraway seeds and marjoram. I shook it up to mix evenly then let it sit for a bit. I then chopped a yellow onion and sauteed it in avocado oil for a few minutes with red wine vinegar, then added garlic at the end. I then dumped the contents of the bag in the skillet and browned the beef a little. I put everything in the instant pot with 3 c beef broth and 2 Tbsp Worcestershire sauce, then chopped some parsnips and carrots then added those. I sealed the removable part of the instant pot with plastic wrap and let it sit overnight. In the morning I put the instant pot together with 8 hour cooktime on the slow cooker mode. Towards the end Sra. Tanque, who got home from work before I did, added some finely chopped multicolored bell peppers. When I got home I boiled some water for wide egg noodles, and added cornstarch to the pot and turned on the sautee function to get a little last minute heat increase and to cook the cornstartch into the liquid. It was incredible. After Dinner Sra. Tanque sent me to get a 1 hour wellness massage, which was very needed.
