Also, I have never been to Korea so I don't know how Korean food compares, but Japanese food is definitely weirder in Japan. Most of what we have in the US is variations on staples like sushi, ramen, katsu, etc., but in Japan they also eat things like seafood pizza and large fishcakes (I thought it was bread and bought two per person...we had to toss most of it because our American stomachs were not prepared to eat large amounts of fried fishcake for breakfast...this is not the main reason I'm going to learn more Japanese before I go again but it's one of them). 2) I heard this really interesting thing on a writing podcast (Writing Excuses, it's great) that international versions of food is often a snapshot of whatever home food was popular when the cooks moved. So families that immigrated in the 70s will cook whatever food was popular in their home country in the 70s, and it may not at all reflect current popular food. Restaurants are kind of like this, but also kind of like improvised/innovated because cooks will take ingredients available to them in the US or UK or wherever, and use them to imitate the flavors and dishes from their home, and it ends up being something all its own. I never really poo-pooed Americanized food because tasty food is tasty food, but it really helped me think about "Americanized ethnic food" as it's own thing and something the cooks are probably proud of, rather than thinking of it as dumbed-down food to cater to American tastes (sometimes it is adjusted to cater to American tastes, but also, see above note about seafood pizza — that is also part of food migrating from country to country). 1 Quote Respawn Story: Fox and the Lost Kit || Current Challenge: Fox vs. Heavy Things Link to comment

Mixed East Asian in a Western world is grounds for bonding To point 2–yes! My mother (and her friends) came to the US in the 1970s, and there was limited access to imported food back then, so they basically took their 1970s countryside Korean recipes and then tried to make them using whatever they could get a hold of in 1970s West Coast USA. So I had things like soy sauce rice with sliced hot dogs and butter XD Korean restaurants in Seattle and Honolulu (at least the ones my mother went to) tended to have a specific menu that may have also been a time snapshot and that’s what I think of when I think of (American) Korean food. But I’ve also enjoyed some modern fusion—there was a place in Seattle that was run by a French-trained Korean chef, and you have not lived until you’ve had duck confit fried rice with soy cured egg. OMG. But UK Korean food—or at least here in central London—is different. It’s mostly “street food” inspired and little shops with mostly convenience foods, aimed at the younger Koreans who are coming to the UK for university. Things also get Romanized differently so I’m not always sure I’m ordering what I think I’m ordering XD (Aside: In outer London, there is a “little Korea” called New Malden, which I think is where more of my mother’s generation of Korean immigrants live. But I’ve only been once.) I was at the play park yesterday and talked to a younger (probably early 30s), more recently from Korea mother (married to an Anglo-Korean) and asked her about how the UK Korean food was different than modern Korean food in South Korea, and she made a face and said she cooks most of their own food at home. So... I guess that’s not approval from the homeland XD As an aside, language also has this sort of time stamp. I wasn’t taught Korean (another digression), but my cousins were by my also-immigrated aunt and uncle, and when they speak to modern Korean immigrants from places like Seoul, they get told that their Korean sounds like “1950s Country Bumpkin” TV Korean.
