Marissa, here is the food: The night before I cubed four russet potatoes and chopped a pound of carrots (in this recipe there is no need to peel them if they are properly washed) and put them in a crock pot. Over that I put boneless skinless chicken thighs (about 8 thighs or 3 pounds) and seasoned them with salt and pepper. In a bowl I mixed a 24 oz can of cream of chicken soup with a cup and a half of half-and-half, a packet of ranch dressing mix, and a generous dose of paprika. I poured that over the chicken and veggies and let it set overnight. This morning before leaving for work I put it in for 9 hours on low. It was AMAZING. Little bit devoured hers. Sra. Tanque asked that it be included in the regular meal rotation. When I dished up leftovers there was just enough liquid to fit in a coffee mug. I drank that straight from the mug and it was still amazing. For the rest, it depends on when the others get healthy. We got word another chaplain at a sister hospital (who takes shifts over here) is also sick. I did some stretches in the morning before work, and also cooked. I boiled some veggie rotini. While that was going I cut some grape tomatoes in half and sauteed them in a skillet, pouring some white wine vinegar on them to deglaze the fond. I then added some chopped rotisserie chicken and plenty of pesto sauce. When the rotini was done I drained them and added that into the mix. I served it with some green beans. I got home in time to see Little Bit for a while before her bed time. I think it's better I waited though, as ever since I started blood pressure meds I've been a more difficult stick. Ahhhh there we go Always glad to be of service. Today is a good day. I had my blood draws and then drank some coffee and had some breakfast. After that I ran some errands that kept me busy till about noon. I had a quick lunch at home then rested for a while and was on the forums. Because I'm off work I got Little bit from day care at 2 so Sra. Tanque wouldn't have to get her after work. We enjoyed ourselves waiting for Sra. Tanque, though I got super sleepy and dozed a bit while Little bit played and watched TV. I was wishing I had been that sleepy before I got her when I could have napped in peace. For dinner I cooked some chicken thighs in sesame oil with garlic powder and ginger powder, then added in some red bell peppers I thin sliced along with broccoli, carrots and snap peas. I then added in teriyaki sauce and let it all warm up. The sauce was a bit thin so i added some flour to thicken it. I served it over brown rice. I didn't do much fitnessing, before writing this post I did the Bare Minimum™ forward fold and squat which felt good. I have some really nice veins on the back of my hand. My inner elbow has become difficult.
