I had a particular gif in my mind that I was going to comment with (joyful baby smothered in peanut butter bouncing in its high chair). But seeing that one stopped me in my tracks and I had to post it instead.

We are finally getting real winter in San Antonio This weekend.

For the last few days the snowflakes seem to stay on the last day of the extended forecast.

 

Today is a good day. In the morning I did some stretches, then cleaned the kitchen and folded and put away some laundry. I went to the store and got some firewood for the weekend. I then got the baby from day care. Dinner was amazing.

 

I took two bags of frozen stir fry mix and cooked them in avocado oil with minced garlic and onion powder for 10 minutes. I then added 2.5 tbsp flour and mixed. Next I added salt, pepper, poultry seasoning, white wine vinegar, 3 cups vegetable broth, three cups milk, and two and a half cups orzo. I stirred it together and let it come to a simmer, then turned the heat down to medium and let it cook for 7 minutes. I finalized the seasoning then added chopped rotisserie chicken and 2 cups mozarella and stirred.  We loved it.

We also have awesome breakfast tacos, amazing brisket, and we get our handgun licenses back in weeks.

I don't deal with patients directly, but I read their notes all day for a living. This job cannot be easy for you even when there isn't a pandemic and I respect all your profession so much for what you do.

 

I also remember visiting Texas from the sandpit in September and being impressed with how cool it was in comparison.

In September it's usually still hot, but the worst of the heat is over. It doesn't really cool off (for us) till October.

Today is a good day. I'm waiting for my small group to start. Today we are talking about the problem of Evil and Suffering (How can God be powerful, good, and let Evil exist?).  Had a good day with Little Bit while Sra. Tanque was at work. I got a workout in while she was napping. I've started using the Journey App that NF makes available to Prime members again, and it's been helpful. Dinner was beef and vegetable soup with puff pastry. 

I took frozen puff pastry sheets and thawed them in the microwave, then tore them into pieces on a baking sheet. I brushed them with a light hint of mayo (to make the pieces crispy on top) and put them in a 400 degree oven for 15 minutes. While that was going on, I cooked two pounds of ground beef with a chopped onion in a dutch oven with salt, pepper, red wine vinegar, garlic, and dried thyme. When the beef was cooked I added peas and carrots, along with 2tbsp corn startch in 1/5 cups beef broth and some tomato sauce. When the soup was done I served it and put the puff pastry pieces on top. It was awesome, espeically since today was wet, cold, rainy, and nasty. Good soup weather.

My church had such a great sermon on just this and I found it really, really helpful.  I don't personally struggle too much with it, but I definitely struggle with the misrepresentation that gets flung around on the topic and it often breaks my heart to see what some folk preach.  Makes me want to slap them with a wet noodle!

 

Also mmm soup.   And that pastry bit thing sounds awesome.  I really want to try it.  We just had some homemade chicken soup this week.  With no yoke egg noodles.   Hah.  There's gotta be a yoke in there somewhere about that...

Oh man, I'm a wuss when it comes to cold weather. I'm not doing well with this AT ALL. Then again... we didn't have a 100+ car pileup!!!! I heard on the news that happened near Ft. Worth, TX. Good lord! We DID have a 26 car pile up the other day though...

I cringe inwardly when Doctors, nurses, or family members try to be helpful and say any of The Stuff You Don't Say In That Situation. As for the noodles, they sound eggselent.

I just heard about that pileup. They are further north than us so they got the cold earlier and more extreme than we will.

 

I'd be a lot more excited about the cold if I didn't know I was going to have to drive in it Monday and Tuesday morning. Hospitals don't close down for cold.

Today is a good day. I took it easy today, but I still did some good intentional stretching and checked off all the boxes on the NF Journey app for the day. I did curbside Grocery pickup and came back and had lunch. We had enough leftovers that I didn't need to cook anything. I also had my counseling session today. It was just intake, but just going over the things bothering me felt good. Afterward I felt physically like I do after a good meditation session. I have some homework in the form of a few youtube videos to watch. Next session in sin is in a little under two weeks.
