In the Long Run: Tanktimus lets go of the short-term

Today is a good day. I came to work early to cover for a co-worker taking care of a sick loved one, which meant no church, but I did cook an early lunch (see below). Little Bit slept though the night, minus a few fusses from which I don't believe she fully awoke (we think she was talking through a dream), and woke up with minimal cough and no fever. She also seemed to display "I feel Better" energy. We think she's out of the woods.

 

Lunch was incredible. I seasoned raw pork chops with sea salt and fresh ground pepper on both sides and let them sit while I prepped other stuff. Said other stuff involved chopping pistachios (roasted and salted) and two shallots. I cooked those in olive oil with minced garlic (as always, measure with your heart) for three minutes, then put them in a bowl. Into the same bowl I added 2 tbsp olive oil, 1 tbsp balsamic vinegar, and some chopped parsley and stirred. Next I added some avocado oil to the pan and cooked the pork chops (about six minutes per side on medium high) and got a perfect cook on them; fully cooked but not dry. I let them rest, then chopped them and served them with the pistachio-shallot mixture on top. The side was pre-made mashed potatoes and a salad kit. It was AMAZING. That topping was incredible.

 

I have been consistent since starting the book with a quick five minute meditation before bed, along with purposeful hugging (still not a euphemism). That, along with reading the book, has put me in a much better headspace. The challenge now is to go ahead with the retreat and the counseling even though I'm starting to feel better. I request accountability please. Monday and Tuesday will be busy, so what will be helpful are reminders about doing the initial steps to set them up late on Tuesday my time. The expectation is I will do them sometime on Wednesday, so if I have not please ask me about it on Thursday.

The reason I wrote it the way I did is because in the past I have passed on good intentions to follow up a crisis with counseling after the crisis passed. I don't want to to that again, hence the wording and request for help.

I totally get this. It’s like when people take antibiotics and feel better after three days, so they stop taking them, which lets the last few remaining badass germs get reinforcements, and the whole thing comes back with a vengeance. So let’s not do this. I’m definitely on board for checking your thread and pinging you if i don’t see the retreat information. :)

Glad to hear it's a cold and you guys can let out a little sigh of relief for not having to dodge around the quarantine complications the Crud brings with it.

Also so good to hear the brain space is mending a bit- and also glad to hear you requesting reminders to FOLLOW THROUGH AND DO THE THING STILL!

Today is a good day. I took Little Bit down to my parents house, she had a blast. We had delivery for dinner. Inspired by @Heidi's thread I got a roastbeef and horseradish sandwich.

It's late on Tuesday for me so I'm guessing it's too early for a reminder, but I'll just echo that feeling a little better is the exact right time to invest in things staying that way! 

 

Purposeful hugs, that's one of the things I track in my bujo and I've noticed that my anxiety and sadness is worse when we miss a couple days of those (or even have less of them, I'm trying to be spoiled with multiples a day). Touch is one of the basic human needs isn't it?

I appreciate the reminder. Touch is a basic human need. I spent most of my life touch starved. Mom and Dad did not withhold affection, but I don't think either of them are physical touch people, so we didn't hug a lot. Being touch starved is part of why I let myself go into an unhealthy marriage, but when we actually got married I was touch starved again. It wasn't till meeting Sra. Tanque that I actually started getting enough touch in my life. 

 

Today is a good day. Little Bit and I spent the day together while Sra. Tanque went back to work. Tomorrow Little Bit can go back to work and we are READY for her to go. I'm feeling not quite sick, but I do feel run down when I move too much, and I've got some sort of cough. No fever though so 🤷‍♂️ We did go to the park to let Little Bit burn off energy. 

 

Dinner was good. The entree was chicken thighs chopped and cooked in avocado oil with salt and pepper, then when the chicken was almost done I added garlic and Italian Seasoning. When it was done I wilted in spinach. I then added a jar of alfredo sauce, then served the whole thing over spaghetti, topping it with panko bread crumbs and parmesan. 

The appetizer was the star though. I supreme cut some cara-cara oranges, then sliced them. Next I laid the slices on some parchment paper and sprinkled them very lightly with salt and pepper. Next I put some prosciutto on them. Then I added mint. Then I added chopped pistachios. Then I added shredded peccorino romano cheese. It was very good.

Most definitely. There's a reason single people who live alone, becomes visibly healthier when they adopt a pet that bonds by touch and snuggling. :)

Point of order. Due to a brain fart I forgot I still need to order groceries, but that wasn't going to happen till after Little Bit's bedtime anyway, so I got done everything I could to that point. We are getting delivery because I just don't have cooking in me (chest congestion, and eyes burning, but my coughs are wet and I can still smell and taste). I emailed the retreat center (waiting to hear back), contacted the EAP AND set up a counseling appointment for later this month, and got the kitchen cleaned up (there wasn't much to do, but I still accomplished it). We are having a winter weather event the next couple of days, the mere threat of which means panic buying in the grocery stores even before the pandemic. Couple that with supplier issues due to covid and we may have to wait for groceries anyway. Happily, I got a few necessary things yesterday, and because of not cooking we still have two meals I can cook.

Hope you overcome whatever bug is ailing ya.   Please don't let Texas freeze again, that was actually the start of many of the resin issues my industry is still trying to recover from, lol.   "Texas froze.  For 3 days.  And everything stopped."
