We’ve since debated going with Rhythm and Bluegrass Boogaloo but we tried listening to some Bluegrass and quickly changed it back to some Johnny Cash and Elvis. Day 2 we started the day at Graceland. We had tickets for 9:45 so we decided to fast until we finished and eat lunch there. I did have some water on the way to start the day. The tour was a lot of fun and a little sad. There were plenty of options for lunch and we decided on the laid back diner. I got the grilled peanut butter and banana sandwich (grilled in bacon grease because why wouldn’t you?). I got fries and a cookies and creme milkshake. I didn’t finish either of those but did share some of Peach’s strawberry milkshake and stole one of her chicken fingers. I had the kids research places they wanted to see and they really wanted to stop at the Bass Pro Shop. It’s unlike any other location and was clearly visible as a giant reflective pyramid in the skyline as we drove into town. We stopped quickly but they had an observation deck on the top. Of course they charge for that but we decided to go for it. It was a great decision. Peach wasn’t feeling great and we ended up staying up top and got a table at the restaurant. We ordered a club sandwich and a charcuterie board for all of us to share. Everyone, including Peach, felt refreshed and energized. It was time to get back on the road. We had a 2 hour drive to Nashville and we had stayed longer than expected. Our plan was to head downtown to the Honky Tonk boulevard and grab dinner before the final hour drive to our hotel in Kentucky. Downtown was a traffic nightmare and it took forever to park and walk the rest of the way. But we the boulevard was really cool but we couldn’t eat most places as it was late on a Saturday and they had mostly shifted to 21 and over. Luckily we had found a cool offshoot by the parking garage that had a food hall so we ate there on a balcony over the sidewalk. Qbert and I had wood fired pizzas. We each got a different one and shared a slice with each other. The girls got pasta from another place. We saw a very cool donut shop with make your own flavor combinations but we were all full. it was hot in Nashville and it was late when we finished so we were glad when we back at the car. Shello Posted July 5, 2022 Author Report Share Posted July 5, 2022 OK I really meant to post vacay updates but there just wasn't enough time in the day and boy did I need my downtime when I got back. This is still the only place I really document my journeys so I'm going to post what I can remember but I'll spoiler for time. If you're living vicariously through my vacation then read up! Pictures are on Facebook and Insta. Day 1: Arkansas and Memphis, Tennessee (copied from previous post) Spoiler Friday was our first day. We had gotten a head start the night before and stayed in Kansas City We fasted through breakfast and got on the road for Memphis. I started the day with a bottle of water with Crystal Light. We ended up grabbing lunch midday at a gas station. I had a hot honey chicken sandwich and some grapes. We made a quick stop in Arkansas in a small town at the Guitar Walk park with tributes to the history of Honky Tonk music and then continued on to Memphis. We got checked into our hotel and took the Trolley down to Beale St. we walked a bit back a forth, I had a drink that turned out much stronger than expected, and we looked for a place to eat. We had trouble because some places you had to be 21 to get in, some had high covers to get in, and lots had love music but kids didn’t want to be somewhere loud (go figure). Once we landed on a place Qbert and I shared a plate of ribs and fries. They were good but not great. We didn’t eat it all and left plenty on the plate. We ended up walking about a mile back to the hotel instead of the trolley. We finished the day with small snacks from hotel. Finished the day with 10,000 steps and over 3000 calorie burn. We had 2 activities planned, visit Mammoth Cave and then go on an Alpine Slide. I hadn't booked a tour for the cave because we didn't know the details soon enough and then they were all booked. The alpine slide was closed down and was up for sale. We did get to do a self guided tour of the cave. It was neat but not as cool as the caves you can see in the booked tours. We fasted until after the tour and then looked for a place to eat. The towns were all small so we drove a bit out of our way to a town with a Waffle House. It's become a tradition and WH did not disappoint. Qbert and I couldn't decide between the same 2 things so we each ordered one and then we split them. I had the bacon egg and cheese sandwich on toast (with hashbrowns) and he had the bacon egg and cheese hashbrown bowl. Both were amazing. I also wanted a waffle (it's Waffle House after all) but ordering one on the side was too much. Peach ordered a chocolate chip waffle and we shared that. Then we got on with a 5 or 6 hour drive across the state to West Virginia. It was a beautiful drive, especially as we started driving up near the Appalachian mountains. But this was the most stressful night. Our final couple hours of driving were on small mountain roads, it was raining, and we were losing cell service. I had no real idea about how far things were and distances took so much longer to traverse on mountain roads, especially in the rain. I was worried we would lose service and navigation and didn't entirely trust it. We had planned to hit a decent sized town for dinner but decided prior to getting into the mountains that we'd just stop at a grocery store for pizzas since we had an Airbnb and could cook. We were stuck in the mountains for what seemed like forever, most places were tiny towns with businesses closed. We finally confirmed that the town we were headed to was out of the way of the Airbnb and would add way too much time one. We finally found a Piggly Wiggly (grocery store) and grabbed some snacks, drinks, and pizzas. We were in desperate need of a bathroom and they apparently had none (? or it was out of order?) so we had to keep looking for something. Luckily we found a nice gas station that had a kitchen with an amazing menu. We bookmarked that for later and confirmed our directions. Once we got to the Airbnb I had phone issues and stressed out because I couldn't call or text to let DDG know we were in and safe and also getting to chat with him was exactly what I wanted to do to finish the day. Luckily we got it sorted and spent the late evening eating pizza, relaxing, and watching Netflix. Airbnb's are the absolute best! I still managed 7913 steps and calorie burn of 2670 despite spending most of the day in the car. The cave walk registered on the Fitbit as a workout too. All goals hit except there were no freggies in site. Still a PASS Day 4: West Virginia - Coal Mine and Appalachian Trail Spoiler We decided we deserved to sleep in and since we finally all had our own beds to sleep in we took full advantage of that. Fasting was easy to accomplish but I did not start the day with water. All we had was tap water but I guess I'm spoiled because I didn't want that. Once we were all up and ready we drove to that decent sized town to visit a coal mine but we stopped at that gas station for breakfast. What a find! The food was amazing. Qbert and I had bacon egg and biscuit sandwiches, mine was with tots. Peach had a chicken sandwich with waffle fries and her bestie got chocolate chip pancakes. Everyone shared a little but I did manage to leave some tots behind. It also turned out that the gas station was quite close to civilisation. Had I known that the night before I might have been a little less stressed. The coal mine was a very interesting tour. I'm sure we got the best tour guide. We take a little train car into the mine that was operational in 1890 - 1910. The tour guide spent 20 years coal mining himself and had a lot of information to share. We had decided to slow down our pace a little so we planned to spend an extra day in WV. As we were planning how to spend the day we realized we were only 40 miles from an access point on the Appalachian Trail. We couldn't resist making a trip down to at least hike a little, enough to say we'd done it. 40 miles is an hour an a half on mountain roads but it was a beautiful drive. We were a little disappointed in our trail hike since the only access point we found included a long stretch of the trail in a small town. We hiked up a hill but then came out on a highway and crossed a river on a highway bridge, then down some stairs do a street until we met up again with an actual trail. The incline on the trail about killed me. We only managed to walk a little over a mile, including a couple rests, and then we turned around and went back. I did count these 2 miles towards my challenge goal of 35 miles. The hike and the drive there and back took a good portion of the rest of our day. We found a pizza and sports bar back in town close to our airbnb and we had pizza and wings for dinner. I did leave some pizza behind but when the waitress said the small pizzas were only 8 inches Qbert and I each ordered a medium. But she underestimated and the mediums were huge. We had tons left. We did stop at our favorite gas station for some treats on the way back. 9201 steps and 2736 calorie burn. No water to start the day and no freggies in sight but all other goals a PASS Day 5: New River Gorge Bridge and Cincinnati Spoiler We slept in again, a lot, but this time I had some water before heading out for the day. There was a fast food chain we were seeing all over called Biscuit World so we decided it was crucial that we tried it. It was AMAZING. I had a breakfast biscuit sandwich with eggs, bacon, cheese, and a hashbrown and then also had an apple biscuit which was a sliced open biscuit with icing, cooked cinnamon apples, covered in granola. It was so good. Qbert tried the biscuits and gravy with eggs. The girls got Dunkin Donuts. 😵 Our final stop in WV was the New River Gorge bridge. We took a boardwalk trail down the side of the gorge to an observation deck) and then climbed the 179 stairs back up again. We weren't really up for a hike and had a tick incident the day before so no one was interested in more so we took a driving scenic tour all the way down the gorge to a smaller bridge near the big bridge. There were some places to pull over and walk around to take some pics and it was a really good time. Back in the car for a 5 hour drive to Cincinnati. We didn't have much planned so we tentatively planned to continue on to Indianapolis. We drive by the apartment I used to live in when Qbert was a baby and then we found a place to eat downtown. Based on the time of day we had decided we'd continue on after dinner. Downtown turned out to be very cool. Had we not decided already to move on it might have been due for a longer stop. I lived there for an entire year and apparently never went downtown. To be fair I was in grad school, broke, with a 6 month old. Dinner was at an upscale place downtown. I ordered vodka penne with grilled chicken. It was very good. I only ate about half and donated the rest but I did have a few bites of Peach's carnita tacos, her Bestie's cheese curds, and of Qberts phenomenal pork burger with blueberry ketchup. We walked around downtown a bit for some more pictures and then off to the car for another hour and a half drive. We got into our Indianapolis hotel quite late but it was the weirdest hotel with all these classical statues so we took some time to explore before settling in. Still managed 7788 steps and 2597 calorie burn. I technically had fruit in my apple biscuit but the kids say it doesn't count. I say it does. Plus there was lettuce in Peach's taco. We have to take what we can get on the road. PASS Day 6: Indianapolis Spoiler We needed some down time again and there really wasn't much in Indianapolis that we were interested in. The girls really wanted to go to a waterpark and Peach found a small inexpensive one. We grabbed some donuts (late after fasting) for breakfast and wasted a bunch of time figuring out a contact lens emergency. The waterpark was really quite nice. I spent most of my time in the lazy river being as lazy AF. They did have a rock wall over a pool so I watched the kids try that. We got snacks at the waterpark concession stand. Between the 4 of us there were nachos, a pretzel, and 2 corndogs. I had a dog and some nachos. The food was surprisingly cheap so we intended to go back and grab dinner but we weren't hungry by the time they closed so we just didn't. Since our trip was Honky Tonk themed and we hadn't Honky Tonked in awhile we decided to go see the new Elvis movie that dropped during vacation. We grabbed fast food on the way, the kids had McDonald's and I upgraded and got Five Guys. I ordered the tiny order of fries with my burger but barely had any at all. The movie was long so it was late when we finished. It was interesting, not quite accurate, but cool to see Graceland and Beale St after just having visited. Despite the lazy river I managed 8715 steps and 2694 calorie burn. No freggies but all other goals aced. Day 7: Indy Speedway and HOME! Spoiler Early in the trip we had decided to use the extra day at the end of vacation to break up the final 9 hour drive home. We had just driven down to Memphis and around Kentucky and we were tired of the car. But by Day 7 we were tired of packing into and out of hotels. So instead of doing a little more sightseeing in Indy and driving part way we decided there was nothing we cared that much about and we could just get on the road. Peach found an amazing breakfast skillet restaurant that we stopped at after sleeping in again, and fasting. We ordered some fried biscuits as an appetizer. Yes, sometimes breakfast deserves appetizers and boy howdy were they good. I ordered a skillet with bacon and cheese and a side of sausage links. I ate about half. I had a bite of Peach's chicken and waffles too. We decided we should at least drive by the Speedway so we did that, very unceremoniously, and then drove 9 hours home. Dinner was Jimmy Johns. We were all amazed we had travelled that long without getting JJ as it's usually a staple. I did eat all my food but I ordered the Little John instead of a full sized sub. I was also tired, and tired of driving so I figured I might need a little extra food later just to stay awake. I did. I grabbed a small vanilla shake from a gas station a few hours from home. I didn't technically leave any food behind but I did deliberately order small portions so I'm calling it a PASS. We got in around midnight and were very happy to be home. Managed another 7661 steps and 2762 calorie burn exceeding my expectations for every day of the trip. All our stops were fun. I got in plenty of activity despite the driving time and food choices were handled well enough considering it was vacation and we were on the road. My first morning home I weighed in a little above what it was when I left but by the 2nd day I was back on track. Shello Posted July 5, 2022 Author Report Share Posted July 5, 2022 Luckily I still had a long weekend to recuperate after the trip before going back to work. I could barely be arsed to do anything since being back. I didn't log any food all weekend since it was so nice not logging on vacation but food was pretty reasonable so I'm counting them all as a PASS. I was extremely tired Friday. DDG tried to take the day off so we could spend it together but he couldn't get away. But I slept in and then sat on the couch most of the day. I watched a bunch of trash TV. I should have gotten some grading done since I was a couple weeks behind but I just couldn't manage it. It was back to eating through the freezer food so we grabbed a pizza that had been sitting there forever. It was a chicken bacon alfredo pizza. We added some pepperoni and it was excellent. It had no reason to be sitting there so long. Not many steps and calorie burn was low but nobody cared. No other goals got done. Saturday was better. I was fully rested so DDG and I made it out to the lake for a 5k walk around the lake. For lunch DDG made us grilled peanut butter and banana sandwiches since I was craving the one from Graceland. Don't tell him but his weren't as good. We debated heading downtown for a band playing in another park in the evening but I decided to give grading a go. For dinner we put some leftover hot dogs from the freezer into the air fryer and made boxed potatoes from the pantry. We did warm up a tin of green beans for some veg. It was quite tasty. There was probably some dessert but I don't remember. Grading got done and was prioritized over any other goals. Sunday was another lazy day. I slept in again since my sleep cycle is still a little broken from vacation. We found a package of breakfast caramel rolls in the freezer so we had prepped them the night before so they could raise overnight. That was breakfast, intending it to last 2 mornings but they were so good we just ate all of it. We did share a banana for some fruit. For dinner I used some frozen (and generic) pie crusts and some frozen chicken breasts and made a chicken pot pie. It turned out really well considering the pie crusts weren't that good and the chicken looked freezer burnt. More grading got done. Hardly any steps but my Fitbit died during the day so who knows. Monday was a tough day. I had a bit of a headache just before I woke up. I ignored it since I didn't have any headache once I was actually awake. We went out for a 5k walk around the lake right away since it was going to be ridiculously hot later. It was still ridiculously humid and it was a rough walk. We ate as soon as we got home since fasting did not help us get through the walk. I had a couple pieces of cheese toast with an over easy egg. We had plans to go out for dinner with his family but as soon as I finished showering and resting I went downstairs to start grading and got hit with a migraine. I took migraine meds right away and finished grading that one assignment before taking a nap. I never really fell asleep and didn't feel much better. I decided to skip dinner so DDG went on his own. But other than chicken pot pie no other food was available that didn't require work so DDG ordered me a pizza. I scarfed that down for a very early dinner. I tried going to bed early, around 8pm but by midnight when DDG came to bed I still hadn't gotten any sleep. I had a lot of trouble staying asleep and then getting back to sleep that I barely slept all night. Shello Posted July 6, 2022 Author Report Share Posted July 6, 2022 Tuesday Packing the cooler: I'm still playing fast and loose with food choices. I didn't log anything and ate what I want. But I still had a bit of that migraine left over and I was completely wiped out since I barely got any sleep the night before. I had forgotten how early dinner was the night before and I broke my fast with a banana mid morning. In retrospect that was likely 16 hours anyway. I did get back to the usual ham and cheese for lunch with some hummus and pita chips. Since I already ate my banana earlier I didn't have anything when I got hungry in the afternoon so I had a big bowl of chocolate ice cream left over at work from an event. Qbert had some cough illness on vacation and has passed it to Peach and myself. I am starting to feel worse rather than better but I think because it's affecting my sleep so I'm just too tired to get better. And too tired to really care. Peach went for her routine annual visit and her pediatrician said she had bronchitis. I have made a doctor's appointment for myself for tomorrow. Food choices were decent enough to call it a PASS given I'm not logging and don't care all that much. I did fast and had the usual lunch with some amount of Reese's, Dinner was out with DDGs family. I felt a little nauseous when we got there so I planned for something light. But DDG was thinking pizza. That seemed fine as I could eat as lightly as I wanted. Except it was probably the best pizza we've had at that place and I ate plenty. But my stomach felt better after so I'd say that's a win-win. I was hungry in the morning and I just figured my body needed extra fuel. I don't feel terribly sick but I'm not sleeping well due to a cough and/or cough suppressants at night so I either wake up tired or I wake up groggy. I feel quite poorly for not really feeling that poorly. I got a small breakfast quesadilla from the cafeteria at work for breakfast and then had the usual lunch following by some Reese's. We only had 2 slices of chicken pot pie left and Qbert was joining us for dinner and there wouldn't have been enough. So I made Spicy Sausage chimichurri sandwiches. Last summer I had accidently bought some jalapeno smoked sausage rings. I don't really like jalapeno so I put them in the freezer to make for a potluck or something. I pulled those from the freezer and mostly cooked them in a pan with some water. Then I made some chipotle mayo with some leftover chipotles in the freezer and I made a chimichurri with some fresh parsley, olive oil, red wine vinegar, garlic, and chili flakes. Once the sausages were about done I pulled them out and cut them into portions and then spliced them open (I should have allowed more time for them to rest but I didnt). Then I put them on the hot pan and covered with some swiss cheese (also from the freezer). Then I assembled sandwiches using some french bread, spicy mayo, sausage and cheese, chimichurri. We just had baked chips on the side because I was tired. The sammies were epic! I can't wait for leftovers. Fill the Tank: Walking would have been less than smart. Shello Posted July 11, 2022 Author Report Share Posted July 11, 2022 I've continued to play fast and loose without logging any food and skipping all fitness in favor or rest and relaxation (and grading). No projects have gotten done nor any decluttering as I have just been conserving energy. I think I'm ready to get back to all some of the things today. Friday I was hungry in the am again so I headed down to the cafeteria for breakfast. I had hashbrowns and bacon. Lunch was the usual. For dinner I used a sheet of puff pastry I had in the freezer prebaked it between two sheet pans and then covered it with some alfredo sauce from the pantry, then cut up some of the leftover cooked chicken breast that didn't make it into the chicken pot pie, some bacon I had fried up, and some pepperoni and mozzarella. That was pretty small and we also had a tiny flat bread pizza with parmesan and tomatoes that has been in the freezer for awhile. I added some pepperoni to that as well and a bit more cheese. We also had a few slivers of french bread left so I made garlic toast. There was just enough for each of us to have a couple small pieces of each pizza and a slice of garlic bread. It was excellent. I did follow it up with two small ice cream cookie sandwiches. Saturday I'm still only able to sleep if I'm dosed up on NyQuil. I was finally able to sleep until the NyQuil fog lifted so I slept in quite late. DDG and I had early dinner plans to meet his boys for dinner before going to the Thor movie so we didn't want to ruin our dinner. It was late when we got around to lunch so we just decided to finish off the chicken pot pie and each had some grapes. We were indeed hungry by dinner. He always orders pizza with the boys but I wasn't really feeling the pizza that night and I figured there wouldn't really be enough for everyone. So I got the Wisconsin burger - 2 smash burger patties with cheese curds and cheese sauce. It was very very good. It was lovely outside that day and the movie theater was cold. After the movie we decided to head to Dairy Queen and try to new Blizzard flavor and enjoy the evening. The new Blizzard flavor is a Drumstick blizzard. DDG got the caramel drumstick and I got the regular but added peanut butter. Sunday I slept in even later than the day before. We watched a little TV before making lunch. I had an egg and cheese sandwich with toast and DDG had peanut butter and jelly. We watched Homeland all day and finally finished the show. We did take a break midday and I got some grading done while DDG ran to pick up groceries. Dinner was more spicy sausage sammies but this time with real baguettes. Dinner was the last of the spicy sausage sandwiches. It was good timing as the chimichurri looked like it had reached it's max life. I tossed the rest after making last night's dinner. After dinner I grabbed a couple Reese's and joined DDG on the couch. Turned our he had already grabbed me some too so I ate some extras. But I was well within my calorie target since we made it out for a walk. Fill the Tank: I was feeling pretty tired but we have a busy week and I don't think we'll have a chance to get out for one until Friday so we decided to give it a try. Luckily it wasn't too humid and it was rather pleasant, until the lat half mile or so. But we got the 5k in. Packing (decluttering): 🤣 Am I even trying at this point? I did make some plans for next challenge and this will definitely get done then. But that just makes me ignore it more now. Scrapbooking (creative work). The new Thor movie is good but it doesn't feel like it has a purpose. Although at the time I was watching Phase 1 Marvel movies I didn't realize there was a purpose until quite a few movies in so I'm not sure why I feel like it's a requirement now. I think Endgame just broke me. We are rewatching though in the Cape Order. I'm very much enjoying the rewatch in this order and seeing the progression. Shello Posted July 13, 2022 Author Report Share Posted July 13, 2022 Tuesday Packing the cooler: It was a decent day even though I went over a bit on calories. I was hungry early so I didn't fast as long as normal and had my banana for a morning snack. Lunch was the usual followed by some grapes in the afternoon. I did try to cut the Reese's habit by having a couple squares of dark chocolate. I still ended up having 1 Reese's (whos flavor was enhanced by the super dark chocolate right before). Overall I had less calories in sweets this way so it's a work in progress. I had to bake for two separate occasions for the following day so I planned to use up some cookie dough I had found in the freezer (pumpkin cream cheese cookies and apple streusel cookies) and then use a leftover pie crust from the freezer and some frozen berries for a pie. Turns out the cookies were from 2017 so I tossed them and made peanut butter oatmeal dump cookies using a half opened bag of chocolate chips, an opened bag of walnuts, and some butterscotch chips from the pantry. The oatmeal was at least from the freezer. The cookies were epic. The pie crust was awful and I had to toss it. The lovely DDG ran out to the store to get a fresh pie crust so I could make the pie still. I used the pie crust, most of the bag of frozen berries and then topped it with a streusel topping using the frozen oats and other staples. Dinner was a divine use of leftovers. We had some alfredo sauce left over from the pizza night so I pulled some gnocchi from the pantry that needed to get used and then pulled some pregrilled and sliced chicken from the freezer and a half bag of peas from the freezer and made chicken alfredo gnocci. I also used the last of the baguette from the sausage sandwiches to make some garlic toast. It was very good. Dessert was a small dish of rainbow sherbet but also a cookie because cookies. Fill the Tank: It was a busy night so it was planned as a rest day. I did just barely burn 2400 calories to count it as a move day. Packing (decluttering): Nothing unless you count tossing 5 year old cookie dough and a dried out pie crust. Scrapbooking (creative work).
