Preparing to go to the gym in a little while, and hoping desperately that the New Years Resolutioners won't be there this evening.

Update an hour later: We're now at the gym. Night workouts are awesome.

Nice. I'm the exact opposite of a resolutioner; I hope to sneak back in unnoticed when the weather is less horrid. Spring Lifting.

Wow, isn't it too tiring to have two walks during one day and a workout? You've got stamina!

The walks are 15-20 minutes long and we spend them talking non-stop, so they're not exactly hard workouts. Since the gym workout comes last, I tend to adjust it to match my current energy level and actively try not to overdo it, because my body gets upset and starts screaming via the pain synapses if I go too hard with the lifting. :)

Sunday

Mid-morning walk with Happy sidekick and Husband. Also evening gym, with focus on pull-ups and chest press.

Forgot to meditate until after dinner, but sat down as soon as I remembers, so it still counts.

Made the Japanese curry I researched yesterday. We have a new favorite comfort food.

My meditation app has started displaying an encouraging quote on the loading screen while the app loads. It's always somehow tied to meditation or mindfulness, about the importance of inner peace and awareness. Today it was "In the midst of winter, I found there was, within me, an invincible summer". Seeing the app quote Albert Camus as a form of encouragement threw me for quite a loop for a moment there...

Our two cats have free access to the dog door, and the Feisty Sidekick actually uses it more than the dog (our Happy Sidekick) does. The oldest of the three, Mellow Sidekick, is a gentle fluff-giant of a cat and though he is fluent in dog door usage, he vastly prefers using the front door for leaving and re-entering the house in a far more dignified manner in the evenings. They roam more or less as they wish, which is one of the reasons for our considerable vet bills - microchip fees, vaccines, and what feels like countless kinds of parasite prevention, it all adds up... :)

When it says total amount of prep and cook time is an hour and forty minutes, it's lying. It took me closer to three hours. Admittedly it was the first time I've ever made it, but on the other I am not a beginner at cooking in general either.

I now understand when you say that its hard to get a good photo. Even when one of the cats was still, they would look the wrong way lol.

Looks delicious. That's a lot of time though! Was the simmering time longer than that hour? Or was it just that the prep work took longer than expected?

The latter. I'm confident I can reduce the amount of prep time as I get more familiar with the process. I actually simmered it a little less than an hour, reasoning that this would help the vegetables avoid becoming too mushy when I reheated the leftovers the day after.

This was my gateway moment into philosophy, though I didn’t know it at the time (what can I say? I was 11 and i thought i was just reading some book.)

I do find it odd and a little weird that it came through as an encouragement. Though existentialism has plenty of mindfulness to it, I wouldn’t exactly connect the two this way.

The curry looks great!

But three hours — nope. I’m glad you liked it. :)

The most time consuming part was creating the roux that everything simmers in.

This is a speedy version of the same recipe... sort of. There are some differences, by necessity. I have bookmarked this as well, and intend to test at some point in the future:
