Snarkyfishguts
Happy New Challenge! Senior Editor/Author Kate DePalma posted this on Twitter at the beginning of the year: It's such a perfect statement of acceptance and care for the self. I had to share it with y'all, in case maybe you also feel the "whoa, we can do that?!" It doesn't change what I want to accomplish, but it lets go of the negative thoughts that weren't helpful. It acknowledges that life throws unexpected trials my way and maybe I'm not where or who I planned to be at this point, but there's a lot of good to me that I gained through those trials that I didn't plan for either. Instead of assigning value to where I'm at today, I'm glad I'm here and excited to keep going. now, for the business at hand: Challenge Goals!! 1. Practice standing on each foot with my eyes closed. I'd like to be able to do it for 30 seconds. I can do it for 3 seconds. 2. Aiming for a cup of vegetables each day. A combination of green and leafy and other veggies based on the MIND diet recommendation 1 cup raw or 1/2 cup cooked: Kale, spinach, broccoli, bok choy, chard, water cress 1 cup raw or 1/2 cup cooked: Onions, carrots, peppers, squash, cauliflower, peas I'll be starting on Week 1. This week I'm going to just focus on recovering from Covid and drinking all the tea. 12 Quote Link to comment

Snarkyfishguts
Good News: Dad is still not sick. The last time Mom got covid, Dad got it a week later. So she started not feeling good last wednesday. If we make it to Thursday, I'll consider us safe from Sick Dad. I'm still sick, but I did feel good enough to dust my bedroom and tidy it up. Dust is no good and must be banished. Now I'm off to heat up some chicken noodle soup, and read A Psalm For the Wild-Built, by Becky Chambers. It's really a pleasant and quiet read. 8 Quote Link to comment

This is the campbells soup, so it's more broth than anything, but it still works. Mom's chicken noodle is the best though, and I'm hoping that one day I can make a good chicken noodle soup. I haven't yet, the last time I tried, it was so, so terrible I have no idea what I did wrong, but by the taste of it, I would say "everthing." 🤣 3 Quote Link to comment
Snarkyfishguts
Today I baked some chocolate chip cookies with the frozen dough I made last month. I just looked at my folks today and it was evident that they really needed warm chocolate chip cookies. I don't think food is always the answer, but it does provide a deep comfort, doesn't it? There's something about a chocolate chip cookie that says "Hey...it's going to be okay. You're going to be okay. The person who made this for you loves you a lot. You are loved." I finished A Psalm for the Wild-Built by Becky Chambers. It was a quiet book, and I am looking forward to the next one. The main character sang in my heart and I felt an instant connection with them, which surprised me a little, but not unpleasantly so. My head is starting to ache so I'll be logging off for a bit. Being here is really comforting, I'm really enjoying reading everyone's challenges and it feels like we're all sitting down with a cup of tea and saying "How's your day going?" and I like that. Have a good afternoon, everyone. 10 Quote Link to comment

I wonder if that recipe would work if I swapped the rice for a really good egg noodle 🤔 I might have to try that...when I am back to eating carbs again lol 1 Quote Life before Death Strength before Weakness Journey before Destination Link to comment

I think if you were gonna go noodle, you'd have to be careful against mushy noodles. Mom sometimes will cook the noodles separately so if you have leftovers, you can just kinda add the noodles towards the end of the reheating so not so mushy. 6 hours ago, Ranger Hal said: I haven't tried making chicken noodle soup, but I usually make turkey noodle soup after mom and I cook a whole turkey.
