Day in Review

Work was busy at the hotel today but the high school has been pretty chill so far. I managed to beat my horrible sugar cravings while I was at the hotel (which I am super proud of). I am slowly working out what my next challenge goals will be as I have to work around a week long vacation :D

I also get to pick up my car from the mechanic today! As nice as it was to have a free loaner car from the mechanic it just isn't the same as driving *my* car. I am also a few hundred dollars poorer and may have to incorporate savings/paying off things into my next challenge; we'll see.

Food Log

Breakfast

  • 3 mini quiches- 7.5g net carbs
  • 2 glasses of water

Snack

  • Asian pear- 10g net carbs

Lunch

  • Scrambled eggs with salsa- 3.6g net carbs
  • 2 glasses of water

Snack

  • Asian pear- 10g net carbs
  • Pistachios- 5g net carbs

Dinner

  • Chicken of some sort
  • Veggies of some sort

Daily carb count: 36.1 (so far)

Have a great day, everyone!

I've been thinking of moving my weigh in days to Monday as well, because of the challenges. :)

Have you decided what your goals will be for the upcoming challenge?

Not quite yet. I know I want a nutrition, strength, and endurance component, but not sure what else I want to do... Maybe something crafty :D

Sorry for the radio silence but things have been mighty busy out here. What with shoveling snow, trying to get the house clean, and working 7 days straight (eight after today), I have been a very, very busy lady!

Watched the Oscars with the hubby last night and I actually beat my husband on our Oscar ballots; I predicted 16 out of 24 wins correctly (he only got 14 right). This is the first year I actually beat him :D

OMG! The recipe for crustless quiche I made turned out so delicious I just have to share!

Ingredients

5 eggs

10 oz frozen spinach (if using fresh blanch in boiling water first)

1 medium onion diced

3 cups shredded Kerrygold Dubliner cheese (or other hard cheese)

1 T olive oil

Salt and pepper to taste

Preheat oven to 350 degrees. Heat oil over medium high heat in a large skillet, add onions and a pinch of salt, cook till translucent. Add in the spinach and cook till most of the moisture evaporates. In a large bowl mix together the eggs, cheese, a pinch of salt and about an 1/8th of a t of pepper (or more if you like). Mix the onion and spinach mix into the egg and cheese mixture and then pour the mixture into a well greased (olive oil or butter works) 9 inch pie pan or spring form pan. Bake for 20-30 minutes or until the top is lightly browned.

I am mighty frustrated with my lack of weightloss. I have been eating well and 100% primal, but I am eating too much. I think it might be time to go back to my ketogenic diet for a while...

Might not be a bad idea.

I suggest read this post by Clawed Bear. He took a huge look at himself and made some realizations. I think you might relate. He's been frustrated too.

Did some soul searching, some reading, some frustration letting, and decided that it is time for me to seriously get back into ketosis. I know that my body does really well with it and that it makes me feel healthy and vibrant. As I have mentioned to a few people I just finished reading "Why We Get Fat and What to do About it" by Gary Taubes. This reinforced all of my personal beliefs on health and disease (even if my certifying body has yet to accept them) and I am looking forward to being the best me I can be.

The Plan (months 1-3)

  • Carefully tracked, carbohydrate restricted eating
  • Stick to recommended foods list from my doctor
  • Make intelligent exercise goals for life and the fitness challenges (reduce if needed for the current challenge)
  • Have patience

Here... We... Go...

  • Crustless quiche (1 slice)- 3.5 g effective carbs
