I managed to beat my horrible sugar cravings while I was at the hotel (which I am super proud of). I am slowly working out what my next challenge goals will be as I have to work around a week long vacation I also get to pick up my car from the mechanic today! As nice as it was to have a free loaner car from the mechanic it just isn't the same as driving *my* car. I am also a few hundred dollars poorer and may have to incorporate savings/paying off things into my next challenge; we'll see. Ingredients 5 eggs10 oz frozen spinach (if using fresh blanch in boiling water first)1 medium onion diced3 cups shredded Kerrygold Dubliner cheese (or other hard cheese)1 T olive oilSalt and pepper to taste Preheat oven to 350 degrees. Heat oil over medium high heat in a large skillet, add onions and a pinch of salt, cook till translucent. Add in the spinach and cook till most of the moisture evaporates. In a large bowl mix together the eggs, cheese, a pinch of salt and about an 1/8th of a t of pepper (or more if you like). Mix the onion and spinach mix into the egg and cheese mixture and then pour the mixture into a well greased (olive oil or butter works) 9 inch pie pan or spring form pan. Bake for 20-30 minutes or until the top is lightly browned. Serves 8 Nutrition Profile Calories: 238Fat: 18gProtein: 16gCarbs: 3g (2g effective carbs) Enjoy! I know that my body does really well with it and that it makes me feel healthy and vibrant.
