Shit Warriors Eat

I ate 12 boiled eggs last night... still didn't meet my calory and protein macros...

 

Eggs are not the best source of protein, I honestly eat them more for the fat.

50 hard boiled eggs -> 3875 Calories, 28 g carbs, 265 g fat, 315 g protein

 

Now that's keto.

Okay, here are some (not terribly good) photos of some noms:

Bacon, thanksgiving stuffing meatballs, acorn squash, onion, mushrooms, kale.  Smaller than usual (this is a staple) since this was the last of all those things.

Chocolate coconut milk ice cream.. there is a banana under there. Right after this I sliced up some cherries to go on top.

AIP Bolognese (or tomatoLESS bolognese) over spaghetti squash.  Meat: grassfed beef and some pastured pork sausage I got from a local farm. DELISH.

Laura did you make your own coconut ice cream? I've tried and failed and given up (well, nothing's ever given up in the Squatcake kitchen, but for now, I've surrendered - next time, I'll try separating the coconut cream and making it that way). 
 
I'm always a warrior at heart, even though I'm taking a break from challenges. So I hope it's OK I post in the food fun. I LOVE cooking! Here are some of my recent noms. I don't think my IRL friends appreciate how much meat I eat. But you warriors will!

I want all those noms.. well not the soup cause I'm weird about meat soup BUT the rest! Holy frak. NOM.

 

And I did. It's super easy. I have an ice cream maker, though, so it helps.  Not sure if that was the problem with your attempt?

That's a good looking crisp on those chickens. You just roasted 'em like that?

 

Yep, I stir my spices (generally smoked paprika, garlic powder or smashed/finely diced garlic, salt, black pepper, cayenne) in butter, then baste it on the chicken. If I'm super-motivated, I'll sometimes pull the chicken out halfway through and baste again. But mostly I just stick it in the oven and forget it. 

 

I also always rinse and pat dry my chicken with paper towels. I have no idea if that makes a difference? 

 

I always put a beer or soda can in the cavity of the chicken, filled 1/2 or 1/3 full with some type of liquid. Then stuff the neck of the bird with something (usually onions or citrus fruit) to hold the steam in. 

 

I bake at 350 degrees. The heat in the center makes the bird cook faster. (I also pull out of the oven and let it rest in a high pot, covered in foil for about a half hour. But that has no impact on the crisp.)

How do you not like soup? I live for fall and soup! Although, admittedly, trying to cut back on tomatoes makes soup a bit less desirable. 

 

I do have an ice cream maker, albeit a cheap one. Maybe too cheap. It's one of the ones you freeze the bowl. It's like it didn't mix up right and a lot of it froze to the side of the bowl. Did you just do coconut milk, cocoa powder and maybe some sweetener? (I tried coconut milk and honey. I added a little salt b/c I was craving salted caramel.)
