Wait and also, sorry for the abundance of posts just now, but we have to talk about my "breakfast" (or, more aptly, Meal 1): Baked sweet potato drenched in grassfed butter, shredded crockpot salsa chicken (literally just chicken and salsa in the crockpot on low for hours) and bacon. I could keep eating that breakfast forever.

Recipe for future reference: Cut chicken into small pieces, cooked in a pot with coconut oil. Added curry paste and coconut milk, then a bag of frozen steamfresh stir fry veggies, chunks of pineapple and raw cashews. Cooked until I thought the veggies weren't frozen anymore. Put cauliflower florets in food processor, processed until "rice" sized, then sauteed in a bit of coconut oil as well. YUM.

mmmmm i love crockpot salsa chicken. i haven't made it in awhile because the SO isn't a huge fan of it. but it's overdue. what kind of salsa did you use?

mmmmm i love crockpot salsa chicken. i haven't made it in awhile because the SO isn't a huge fan of it. but it's overdue. what kind of salsa did you use?

Pineapples and cashews. Totally where it's at. I support that decision.

 

I used Green Mountain salsa. I LOVE Green Mountain salsa; it's delicious and doesn't have any bad stuff added.

Today was a no good very bad day. And I have a TON of work to do over the next few days, to the point where I'm not sure how it's possible, but I'm just going to have to triage and then play catchup when the badness is over.

You guys are great. I'm so grateful all the time for the support I get here. I haven't been paying it back this challenge because I've got too much to do, but I am hoping to be a better member of the community after this unpleasant patch is over. I remember when I first joined NF one of my favorite parts was feeling like I really knew people through following their threads and supporting them, and I want that back. I'm a bit melancholy thinking about it, but I'm optimistic I can get back to playing a supporting role in people's journeys at some point soon.

 

Today was another day of running around and being overwhelmed but there is light at the end of the tunnel. The final draft of my big paper is due in 48 hours, and then hopefully things ease up a bit. Also, a few of my responsibilities are getting passed on to other people soon. I'm just trying to keep going slow and steady until things get a little less hectic. Tonight I was going to order in for dinner but instead I came home and heated up food I had already cooked. It was only a minor victory but even a minor victory counts. Right now I'm struggling a little bit — looked up how to make an appointment with counseling services at the university though I didn't follow through just yet — but I am hoping that if I just keep plugging along things will feel more manageable soon.

 

Sorry this was a bit jumbled; don't have the capacity or time for self-editing at the moment because I need to get back to work!

hey girl. don't you worry about being busy. we all cycle through being able to keep up with threads and having way too much to do outside of NF. we'll still be telling good stories when you can follow along again ;)

that's a major victory! i always think i want take-out. then I add it into my food diary before ordering and say hell no! though sometimes I get it anyway... and I'm not even close to as busy as you. keep it up!

Yesterday in the gym I was doing squats and bench. And there was this girl on the other squat rack and then on the other bench doing about the same workout as me, with about the same weights. And at one point I accidentally took her 25-pound plates and then realized what I'd done and apologized, and we both said, at the same time, that it was nice to be fighting over the 25s with another girl. And I feel like she might be the kind of person who is on here. So if that sounds like your experience and you have cool red-dyed hair and work out at a university gym, get at me.
