Sorry to take up so much space, but I'm catching up on weeks of not post I guess.

I wanted to celebrate this: I slipped into ONEDERLAND over the holidays. I'm not losing fast, but I'm losing steadily.

Also, I don't know if this would be helpful to other, but I signed up for My job encouraged us to as one of their healthy benefit plugs. I'm still learning how it works, and this is my first week, but it looks pretty good. Basically, I set up meal profiles (and low carb is an option), assign the profiles to days of the week, tell it what grocery store I'll be shopping at, and it generates a meal plan for dinners during the week.

The recipes for this week look good, although I did have an argument with the software about my meatless Friday. I didn't want tofu, and it didn't offer me any other options.

Wow Peggy, you are a godsend of bean recipes. I don't make beans as much as I should, because it tastes the same to me. Now I know better! :)

Maybe mock protein? Still has tofu in there somewhere, but does taste like it.

Question - so you don't have to first soak dried beans if you're using a crockpot? Also, why do people discard the ones that float?

Wow Peggy, you are a godsend of bean recipes. I don't make beans as much as I should, because it tastes the same to me. Now I know better! :) Maybe mock protein? There's a registered dietitian/RN giving a talk at work right now that is trying to help some of our patients with weight loss and is advocating for the traditional "balanced" American food pyramid/plate and it just reminds me how thankful I am to have found NF. I get that some diets do not work for everyone, but I think that the Western diet needs to be revamped to be less grain dependent and I can't wait for that day to happen.

To be honest, banana bread isn't a terrible treat as sweets go. I think it's lower in sugar, fat, and empty calories than most baked goods.

Sabrina mentioned smoothies, and ripe bananas make an AMAZING base for them. I blend a ripe banana, another piece of fruit--oranges are yummy--and a couple of handfuls of frozen greens, adding each ingredient separately and adding enough water for smooth blending.

I also thought this recipe was good when we tried it a few months ago:

"When you have a sweet tooth and want to stay on track, here's a nice treat. Sugar is NOT an added ingredient.

3 mashed bananas (ripe)

1/3 cup apple sauce

2 cups oats

1/4 cup almond milk

1/2 cup raisins (optional)

1 tsp vanilla

1 tsp cinnamon

Bake at 350 for 15 to 20 minutes"

Obviously, combine all the ingredients, although the recipe doesn't actually say to, and drop blobs onto cookie sheets, probably greased cookie sheets. These are really good, and perfect for cookie cravings.

That sounds yummy! Mostly my concern with banana bread is that I know that with my sweet tooth, if I have one slice, I'll keep coming back until it's gone. One slice is okay whole loaf is not :P

Ooh, I never knew to soak garbanzo beans with a little bit of salt/baking powder. I wonder if that's why mine end up harder than the ones from a can? You're like a bean wizard!

Oh man, I think I'm caught up. (Just got back from the gym, stretching class and discussing goals with my trainer, then threw together some turkey meatballs and now I'm just waiting impatiently for them to finish cooking...)

In terms of Paleo, I'm brand new. But I'm learnin'.

 

Banana bread is WIN. Seriously. You can never have enough banana bread. Zucchini banana bread is equally yum. I've seen some recipes made Paleo by using almond flour.

 

I'm shopping according to a plan right now, but I'll bite. What would you do with quinoa? I bought some a while back and I used it for one recipe...

OK the food which is languishing in my kitchen is ....frozen fruit.  I love it but in the past I ate it by spooning it into lemonade or over ice cream.  Not options now, least of all because it's COLD and who wants lemonade when it's 30 degrees?  It's all sugar free, just fruit that has been frozen.  Blueberries, raspberries, strawberries mainly.

Regarding cranberry sauce, here is a salad dressing recipe:

 

Ingredients:

  • 1/2 cup cranberry sauce
  • ¼ champagne vinegar
  • ½ cup extra virgin olive oil (organic preferred)
  • ¼ tsp pepper
  • ½ tsp salt (I use Himalayan pink salt)
  • ¼ tsp garlic powder

Directions:

Place all the ingredients in a jar, shake well & serve.  Store in the refrigerator.

Yesterday I was thinking about making banana pudding. It's just banana, heavy coconut milk, and egg yolks.

So many different smoothies you could make!

The only thing we make with avocados is guacamole to dip tortilla chips into.  I've also added them to green salads.  My MIL likes them sliced on sandwiches.  They might be a good addition to smoothies.

 

I've seen recommendations online for putting them on top of fried eggs, hamburgers, roasted chicken, etc.
