I am low carb so the chicken and hamburger are getting pretty boring. However I just discovered that there are low carb salad dressings and Ranch tastes wonderful on any kind of chicken. Horseradish is also wonderful on eggs. My diet may survive after all. Especially since I discovered how low carb Cool Whip is!

Pork tends to be my quick-to-make meal meat.  Pork covered with mustard, and then coated with seasonings of choice makes a good, quick meal.

 

And careful about the cool whip!  Less because it's intrinsically bad, more because you could easily condition yourself to use other products similar to it and not realize what carbs you were ingesting.  Though fun fact, frozen cool whip becomes an interesting frozen ice creamy treat.

Sure thing! I got it out of the Well Fed cookbook.

 

I modify it a bit and add MOAR chocolate powder, usually an extra veggies like carrot or zucchini or turnips, and top it with sour cream (which isnt paleo but I don't really eat paleo) and avocado. Had extra guac so did that instead this time. I have also been known to eat it with plaintain chips...frito pie style. YUM.

 

Tell me how it turns out if you make it!

So last night I made sweet potato and turkey patties.  I pre-cooked the turkey, boiled and mashed the potatoes, turned it into patties, and then used a grill pan to grill them on my stove.

 

I was fully intending on the pound of ground turkey and the single sweet potato to cover two meals.

 

Nope.  Nope, I ate everything.

 

I feel like I've hit a milestone in my eating:  "Eat Pound of Meat, Don't Feel Guilty" Unlocked.

Any idea if that would work with normal potatoes?  It sounds like a really good idea, but I can't stand sweet potatoes.

I can't imagine it wouldn't work.  The sweet potato does add to the flavor of the patty, so I'd just say make sure to liberally season the meat when you brown it up first.  Also, it's possibly better if you make everything a bit ahead of time, and then mix.  Mixing hot potatoes and meat and making patties by hand is a bit hot.  Also make sure to add in some bacon fat/olive oil/butter to add extra fat to hold them together better and make the 'burgers' a bit more squat so they hold while being grilled.

Food Porn!!!!

 

Ok, so my go to pre-workout dinner meal right now is nachos. "Nachos?" you say. Yes, nachos!

 

But here is how I make them:

 

4oz of boneless, skinless chicken breast grilled up on my George Foreman grill

1 serving of Party Tizers Veggie Dipping Chips w/ Kale, Carrots, & Spinach

1/4 cup of plain greek yogurt (I usually use either Fage or Kirkland Signature)

4 Tbsp Homemade Salsa

1/4 cup of Shredded Cheese (usually Kirkland Signature)

 

483 cal (21g fat, 35g carb, 41g protein)

 

You can easily adjust this to either cut fat or cut carbs somewhat. Sometimes I will remove the greek yogurt, cheese, or salsa depending on where my macros are at for the day.

Made it yesterday.  Will be happily living on it for lunch this week.  I threw in a lot of mushrooms and have been eating it with rice since I a) like rice and b  ) am a wuss with spices.  Thank you!

Figured maybe I should share this here as well:

 

Reese's Greek Yogurt Pudding:

 

170g of greek yogurt (I've been using Fage 0%, because stores seem to have stopped stocking anything with fat in it *grumble* )

5-10g Baking cocoa (I've been using Hershey's Special Dark)

32g Peanut butter (2 tablespoons)

1 scoop chocolate protein powder (Mine is 75 calories per scoop, with 3.5g carbs and 13g protein)

 

Mix all together carefully (because the powdery stuff goes flying if you don't use a large enough bowl), and consume.  Sometimes I add a bit (like a table spoon) of almond milk to thin it out, because it's super thick.  Milk makes it a bit less dense.

 

But for 375 calories, you get 18g of fat, 38g of protein, and 21g of carbs.

 

Mounds Bar Greek Yogurt Pudding:

 

170g of greek yogurt (I've been using Fage 0%, because stores seem to have stopped stocking anything with fat in it *grumble* )

5-10g Baking cocoa (I've been using Hershey's Special Dark)

1 tablespoon liquidy coconut oil

1 scoop chocolate protein powder (Mine is 75 calories per scoop, with 3.5g carbs and 13g protein)

 

Macros for this guy are 315 calories, 16g fat, 32g protein, but only 14g carb.  IF you want to add another tablespoon in of coconut oil, you get a 445 calorie snack with 30g fat, 32g protein, and 14g carbs.

A bit off topic but there's a recall on several brands of almond butter for potential salmonella contamination:  MaraNatha and Trader Joe's.  This article lists for Canada but it would be worth checking for the Americans.
