2 Week Break Mini Dungeon: Diet

My "new usual" breakfast is a hiwl of overnight oats. This morning, I had to catch an early ferry, so I didn't have a chance to cook eggs. So I went back to my "old usual" of toast and peanut butter. I'll monitor how my satiety (sp?) goes.

As I suspected, white bread toast is no longer an acceptable breakfast for me. Starving by lunchtime.

Fish! I love how easy & tasty this is...

Ingredients:

1 (or more) frozen individually wrapped white fish filets (catfish, whiting, cod, swai, etc)

1 Tbsp butter

1 tsp lemon pepper seasoning (more or less to taste)

Steam fresh vegetables of choice (mine is asparagus)

Directions:

Open the plastic around the fish filet and plonk it on a plate. Put the butter on top of the frozen fish. Sprinkle the seasoning over the top of the fish. Wrap the plate in microwave safe plastic wrap, making sure the fish is completely sealed in. Microwave for 3 - 10 minutes (depending on thickness of your filet). Take plate out but do not open the plastic covering it. Put your veggies package in the microwave and nuke for 5 minutes. Then open both the fish and the veggies, pour the veggies into the plate and mix them around in the buttery fish juice, and enjoy. Nom nom nom.

Days 1-6 - So far you've hit on all the things that I'm already doing!  My favorite protein changes frequently, but I often eat chicken - usually in a stir fry or curry of some sort so that I get lots of vegetables, too.  Recipe changes from day to day, but generally involves a couple teaspoons of minced garlic heated in a quality vegetable oil on high heat, add in the cubed chicken and stir until white, add in onions and whatever other vegetables I have on hand and sautee for another couple of minutes, then add water and seasoning/sauce until done.  Serve with brown rice.  I have a psychological block against anything involving fish / shellfish, and I'd like to attempt to change this. So, I'm looking for recipes for tasty fish dishes, preferably ones that don't smell like fish!

I eat poached eggs almost every day , so got that one.

Favorite protein would have to be... egg right now, honestly. There is so much I can do with it! Poaching them, then placing them on English muffins with some jelly and salt and pepper, open face. Chomp, nom, yum! And this is usually pretty fast to make too, so great in a hurry.

Drank a lot of water yesterday at dinner to balance out the wine I was drinking!

As far as protein goes, it's probably a toss-up between eggs and fish. Mostly I cook fish the easy way, in my fish oven. (Japanese apartments have special little "fish ovens") I just top it with pepper, salt, and a little lemon juice and cook until it's opaque.

 

My favorite eggs right now are Egg muffins. They are all over the paleoblogverse, but here's how I make them"

 

Preheat oven to 190C. 

 

2 cloves garlic

1 small zucchini

1 bok choy

3-4 cherry tomatoes

5 eggs

1 tbsp olive oil

salt, pepper, herbs to taste

 

mince garlic, finely chop zucchini and bok choy. Cook garlic in olive oil until fragrant, add zucchini and bok choy. Cook until a bit browned at the edges. Remove from heat.

 

Quarter cherry tomatoes, evenly divide pieces among six silicone baking cups. Top with cooked vegetables. Beat eggs (I usually use two whole eggs and three egg whites, but any combo will do) and season with whatever. Pour egg mixture evenly over vegetables, leaving a bit of room at the top of the cup.

 

Bake for about 20 minutes, checking for doneness by inserting a knife or toothpick into the centers of the "muffins" until they come out clean. They may "pop" up and even partway out of the cups - this is just mini-souffle happening - it will shrink when it cools.

 

Warning: if you aren't using silicone bakeware, grease the daylights out of your muffin tins. Eggs stick. Eggs are made of stickingness. 

 

I drank three liters of water yesterday, I will try to hit that again today.

Removed them from my diet long time ago. When I need something similar in texture and sweetness, I usually turn to carrots

Same here regarding potatoes, I eat yams instead.

Day 8: Replace your potatoes

Your task today is to replace potatoes in your meals today with something else tasty.

Potatoes are a rare treat for me these days. Most days I get my carbs from oatmeal in the morning and brown rice the rest of the day. 

 

I'll have a sweet potato later.

Day 9: favourite recipes

So you've posted your fave veg recipe and your fave protein recipe, now to post any recipe that you love to make.

I'm pretty sure I've shared this somewhere before but I'll share it again. My favorite recipe is banana egg oatmeal in the morning. I never eat instant oatmeal anymore- it tastes bad and has a lot of sugar in it. But plain oatmeal is boring, so I dress it up with banana and egg. Here's what you do.

 

Makes one serving.

Cook oatmeal on the stove top as per instructions.

Mash one ripe banana and whisk one egg in a bowl.

When oatmeal is almost done cooking, add in the egg mixture.

Cook until egg is done, transfer to a bowl, and enjoy!

 

I add cinnamon and sometimes nuts or honey. I've also added peanut butter, which was less weird than it sounds but still a little weird. It's a really great breakfast that's sweet without added sugar and fills me up for a few hours. Try it!

Hmm. I love making okunomiyaki (japanese style pancakes) but they are made with shredded cabbage as a base and I cant have that while nursing my daughter. =(

Thanks for the heads up on the last day part. Today was so much snacking on candy. One of my worst days food wise...
