obax Posted January 6, 2015 Report Share Posted January 6, 2015 Made me some stew the day before the official challenge started. Of the beef variety. 'Tis not paleo, since neither am I, but I'm certain there are ways to make it so. It's based off of this recipe, but with some changes, namely I used potatoes instead of barley, beef instead of venison (because I couldn't find any venison *frown*), regular instead of boiler onions, and added celery. And it is good. Also, if you like nerdy recipes, peruse that blog. There are several things on there I would love to try but would never make, and a lot of the historical recipes are neat! I've nothing special to offer today, except that grass fed chuck was on sale at the local market, so I bought four pounds of it and put it in a slow cooker (after searing well) with kosher salt, ground pepper, and a couple of tsp of something called "liquid smoke". (I really don't want to know whether or not that's bad for me.) Anyway, ten hours on low later and pulled it out, poured off most of the fat, shredded the meat, and mixed it all back up again. Super super easy barbacoa (if you add salsa), pulled beef (if you add BBQ sauce), or just a nice protein complement to my typical veggie stir fry. Even Mrs. Mediaguy and the apprentice love it with rice! I've never made meatballs without breadcrumbs before so I was worried about them holding it together without crumbling but they stayed meatball-shaped better than my usual recipe!! Mash up a banana with 1-2 tbs of nut/seed butter of your choice (I think it tastes best with sunflower seed butter). Mix an egg in, and then microwave the resulting mess for 1-2 minutes, depending on your microwave, and then mix it up before you eat it. If you'd like, add a few chocolate chips after you take it out of the microwave. It looks pretty gross, especially if you add the chocolate chips (my husband referred to it as "mush" the last time I made it), but tastes really good and is surprisingly filling! I have the same problem! I usually eat breakfast once I get to work since I'm not much of a morning person and can't eat right after I wake up. This morning I brought 1/2 of yam, cubed, sprinkled with some pumpkin pie spice and nuked it in the microwave for 5 mins. Turned out awesome! My favorite recipe is SO SIMPLE. 1 cup frozen berries (blueberry is my favorite but any berry will do)1/2 - 1 cup frozen greens (kale or spinach)2-4 cups milk (cow's, almond, coconut, cashew, a blend... whatever)Optional for a protein packed smoothie: 3-4 tbsp of protein powder (whey or soy)Optional Stevia powder or liquid if desired, sweetening to taste I put the berries in the blender, then the greens, then about half the milk. Pulse, then scrape with a spatula, then pulse some more. It usually needs to "burp" every few seconds. Add more milk as necessary. They've got a good burst of flavour, so they go pretty far. It's just 250g chicken mince, 1/2 cup chutney (the recipe calls for mango, but I just picked my favourite), and 3/4 cup of desiccated coconuts. You mix the mince, chutney, and 1/2 cup of coconut together, make little balls,roll them in the remaining coconut, then fry or grill them for a few minutes, until cooked through. This made heaps, from my perspective, because they have a really strong flavour. This amount serves 4 people/meals. You can also put an extra little dollop of chutney on if you want to be fancy. This time - lettuce, chredded cabbage/carrot mix, avocados, black sesame, and a soy/mirin/crushed red pepper sauce. mediaguy99 Posted January 8, 2015 Report Share Posted January 8, 2015 Paleo turkey sausage recipe!I'm always at kind of a loss for breakfast since I don't like eggs or fish and I eat paleo all week. I turn to jimmy dean often enough, but then I started thinking about all those nitrates.... so I looked all over for a way to turn my ground turkey into sausage and found (and modified) the following recipe: 1/4 cup unsweetened applesauce1 teaspoon salt1/2 teaspoon ground black pepper1/4 teaspoon cayenne pepper (omit or reduce for less spicy sausage)1/4 teaspoon rubbed sage1/4 teaspoon crushed red pepper flakes1/4 teaspoon coriander1/8 teaspoon garlic powder1/8 teaspoon onion powder1 pound ground turkey2 teaspoons EVOO Mix all the spices together and then make a test sausage by shaping 1/4C of the mixture into a patty and pan-frying it with a little EVOO. Make changes to the seasoning to your taste, and if you like how it tastes, make the rest of them. I had a hard time shaping the meat, even though I'd heard that wetting your hands would help. So, instead, I just used a 1/4 cup to scoop out the meat, and drop it in the pan without worrying about the shape. Then, once that side had set up, I flipped them over and pressed them down using a spatula. That made them generally round. Also, when they were nearly done, I poured a little water in the pan to de-glaze it and let the sausage patties soak up some of that yummy flavor. Makes ten sausage patties. I really love chickpeas, so this seems promising... That's almost like the way to make channa. I have one thought. Pretty much every recipe that calls for regular ginger (Zingiber officinale) can be improved by adding somewhere between a half-to-equal amount of blue ginger (Alpinia galanga) cut in the same way. I've tried this with Tom Yum, steamed fish, ginger chicken and even gingerbread (men and snaps), and it's always been a great enhancement for depth of flavour. Blue on the right, regular ginger on the left. Try asking for "galangal" at your Asian market.
