mediaguy99 Posted February 10, 2015 Report Share Posted February 10, 2015 As I've got the black lung, pop, I made myself some spicy tortilla soup. Except I didn't put any tortillas in it. Instead I made little dumplings out of cornmeal and put those in instead 6C chicken stock2 large chicken breasts, grilled and diced1 can Trader Joe's tomatoes and green chiles 1 large green pepper, diced1 large red pepper, diced1 onion, diced4 cloves of garlic1/2 tsp ground NM red chile1 tsp garlic powder1 tsp oregano1/4 C chopped fresh parsley1/4 C chopped fresh cilantro Grill and chop up the chicken. Put the stock in a stock pot and turn on to medium heat. Put the diced onions in a skillet with some EVOO, add the garlic and let it sautee over low heat for a few minutes until the onions become translucent. Add all the spices including the parsley (but not the fresh cilantro) and stir. Put the chicken and the onion sautee into the stock pot. Chop up your peppers and put them in the pot. Cover and simmer for a half an hour. Now it's time to make the dumplings. Combine about 2/3 C of self rising flour or bisquick with 1/3 C coarse corn meal. Mix with 1/3 C milk (almond, rice, soy, cow, goat...) until it becomes a thick dough. Drop by the teaspoon into the soup, checking after the first one or two that they're coming out the size you want (they puff up very quickly). The soup will thicken up substantially. If you don't want that, just add more stock. I find they work best cooked over slightly lower heat, and you need to let them cook for a bit longer than you would regular pancakes or they fall apart when you try to flip them. Good luck! I was a little dubious, since I'm not at all familiar with these spices combinations, but I said 'To heck with it!', and made it anyway. Following your instructions worked perfectly! I do believe adding chocolate would make these pancakes even MORE awesome . Murphy's Roommate Posted February 16, 2015 Report Share Posted February 16, 2015 Chili. What I like best about chili is that you can put nearly anything into it, and still call it a chili. Ingredients: Two reasonable size sweet potatoesA couple of chilisabout 2lbs of stew meata large white or yellow onion (I forget)A large can of kidney beansA wild serving of optimism (not pictured). Slice, dice, and shove everything into a big pot. This gives you an idea of the size stuff got cut up into. Now, comes the hard part. I generally let it boil for about twenty minutes to ensure everything in the pot is good and dead. Then, you have to dial the heat way back and just let it percolate for hours. And hours. It should end up as a hearty, thick chili - and it will take a long time for it to simmer down to that. This needs TLC - I let a batch burn on the bottom by taking a nap and not turning the heat down low enough. That was an epic fail as I was taking that batch to a super bowl party/chili cook off. I came in last, but I came in! Sometimes we learn more from our failures than our successes. Murphy's Roommate Posted February 17, 2015 Report Share Posted February 17, 2015 The slow cooker would be smarter. I just went with a large pot because I have a large pot. No spices - I like the earthy flavor of the beans and meat and don't need much in the way of excitement beyond the onion and sometimes garlic. A couple of generic store bought chilis - thai and cirano (I think, maybe?), sometimes Anaheim chilis. Spread on wax paper, single layer so the slices do not touch. Nuke on high until you start to see some browning (on my microwave that is between 4 and 4.5 minutes), flip them and nuke another 20 secs (keep an eye on them to stop if you see any browning too much). Take em out, allow them to release the steam for a minute or so, then spice them (I used on these a mix of salt, pepper, onion powder and garlic salt... a spritz of vinegar can be nice too), but anything works really, try curry powder for a kick. I'm thinking do the browning in a pan, then dump in crock pot on low for maybe 4 hours? Tempted to add raisins, too. I added the walnuts in when you brown the onions + cook down the celery + carrot. I think it'd adapt nicely to a slow cooker, especially if you browned the meat in a pan ahead of time anyway. If you have the extra time, I'd brown the meat, add the onions, walnuts, carrots, celery to cook for 5 minutes. Deglaze with wine and then dump that whole thing in the slow cooker. Then you might want to take the lid off for the last hour or two so that the sauce can reduce down if that is an option. If you don't have the extra time for that, I'm sure it'd still turn out tasty! I had 2 cans of tuna, eggs, ginger and hunger. so I made this: Drain the tuna (not all of the liquid, but most of it), add some freshly ground ginger, a dollop of garlic/habanero paste, a dash of soy sauce, some chopped cabbage, and two eggs scrambled. Make patties and cook em, bout a minute a side. Voila. Easy spicy tuna fishcakes. Good with a squeeze of lime, but then again what isn't? Maybe not the prettiest looking, but I can assure you they were GOOOOOOD. blkhole24601 Posted February 25, 2015 Report Share Posted February 25, 2015 I COOKED FOR THE FIRST TIME IN A LONG TIME TONIGHT Baked honey and mustard chicken with sauteed spinach and mushrooms with pine nuts. Boyfriend approved! For the chicken, it's: 0.5 cup honey, 0.5 cup mustard (I used honey mustard), 0.5 teaspoon chives (original recipe called for parsley), 1 teaspoon paprika, and 1 teaspoon oregano (original recipe called for basil). Mix it all together and pour half the mixture onto 3-6 chicken breasts and stick it in a 350 preheated oven for 30 minutes. Then take it out, flip the chicken over, and pour the remaining mixture over the other side. Brush to spread evenly if desired. Bake for another 10-15 minutes or until chicken is done and then let it cool for 10 minutes, and voila! Chicken! The side dish is simple: heat up a tablespoon or less of vegetable/olive oil, and then toss in spinach and mushrooms, and then once the spinach has shriveled up as pictured, finish cooking with the pine nuts. Flavor as desired; my boyfriend used the honey mustard sauce leftover in the pan, I used lemon garlic ghetti.
