My first meal at a vegan Bbq place, here.

Mac no Cheese

Spicy bbq soy curls

Bbq tempeh ribs

Collard greens(something I've seriously missed, since going veg)

Hush puppies, with a seasoned butter-like sauce.

Not sure we have any other veg Monks, here, but even a non vegetarian, can appreciate these.

I'm not a vegeterian monk, I'd like to be. Love that meal =)

 

I had always said that, too. It took me a couple times to make it stick. I think more people would try it, if there weren't so many militant vegans out there, trying to make people feel bad for trying and failing once or twice. Next week, I'm making some egg plan Parmesan, from Vegan Black Metal Chef's Youtube channel.

No, we don't. We welcome people of all eating preferences. I know of a monk, for instance, that's a vegan level 5. He won't eat anything that casts a shadow.

I realized if I didn't get back into prepping my food, I would eat lazily and badly this week again. I used my "after run energy" to get me going. So I have all 3 meals and a snack prepared, packaged, and in the fridge for the next 4 days. (with the exception of mixing the avocado & tuna for a lunch because brown avocado=ew)

Highlights: Maple dijon glazed pork chops w/sauteed spinach & 1/2 a sweet potato, herb encrusted tilapia w/brussel sprouts & Parmesan couscous, chicken & mushroom stir fry w/peppers, and lime & chili grilled pork chops with broccoli & rice

 

Yay! Now I know I'll eat healthy this week. Cause it's all cooked. I'd forgotten how little time it takes to do that with some planning.

It is indeed!

 

Breakfast pretty much always had miso available when I was in Japan.  Dinner didn't always, but I had ramen a lot.... so soup with a soup side would be a bit of overkill.  But yea.  Fantastic.

 

Is the squash just baked, or is there something on it?  Is the whole pile squash, or is there fish under there?

 

Just steamed/baked squash.  Actually I didn't add enough water to the pan and the squash is now super dry. :(

 

And no fish.  I don't buy fish because I don't trust myself cooking it.  So lots of carbs for breakfast, and not even a workout day!  The horror! :D

This weekend's baking adventure: Strawberry Walnut Bread

Apparently, it came out well (I used more strawberries than usual, and mixed the sugar with the dry ingredients rather than the wet this time).

Sweet Potato and Apple Quesadilla:

 

1 Tortilla (I used Udi's)

1/4 C Sweet potato sliced thin or precooked

1/4 C apple - shredded

1/4 C swiss cheese

 

Stove on medium, tiny bit of oil in the pan, add tortilla, add sweet potato, apple, and cheese.  Fold tortilla and let heat until the cheese is bubbly and flip.  Serve with salsa and veggies.

 

Here's tomorrow's lunch :-)

Kismet! I happen to have all of that AND only two tortillas left over, from last night's dinner. Looks like I'll be having that, for lunch, sans cheese, but I make a decent vegan cheese sauce that is surprisingly...nothing at all like cheese, but it taste good :D.

Soooo....  While Company was here she kind of hooked me on chia seed pudding.  She made it with water, I just tried it with almond milk, and now need suggestions on how to experiment with it.  Go!

Oooh, I used to make one with raspberries, chia seeds, milk, and vanilla protein powder.  There was another with chia seeds, milk, chocolate protein powder, and peanut butter I think.

Ooooo.

 

May have to try that.  Since it's all cold I guess protein powder is usable, unlike oatmeal.  Did it require a bit more liquid?Kind of liking the idea of 2 Tablespoons of chia before bed into some almond milk to get a breakfast ready for the morning.
