Ack! You got me! To appease you, I'll post today's protein ice cream success method.

 

 

Prefreeze ice cream machine freezer bowl and final transfer bowl. Covered.

 

Warm 4 egg in shell to 60°C by submerging in hot water. Crack into mixing container. Do not let cool.

 

While slowly pouring in a small stream, whisk in approx 12 oz boiling water until the eggs reach a custarding point of 73°C. 70-75°C is acceptable.

 

Mix in approx 4 oz of IMO syrup.

 

Let cool to under 50°C.

 

Blend in protein powder. I used 5 scoops of whey isolates; 1 scoop pure unflavored, 2 scoops vanilla cream, 2 scoops cookies and cream.

 

Chill, but don't freeze.

 

Set up ice cream machine with freezer bowl. Pour in the chilled custard and let churn.

 

When the ice cream is too thick to churn anymore, transfer it to the final freezing bowl using non-scratch tools. Place covered in the freezer.

 

Lick up the remaining mess.

 

 

Total macros:

 

154 protein

25 fat

130 carbs

- 4 sugar (cookies and cream)

- 122 fiber (120 from syrup)

Just so we're clear.... he called himself a pussy first. And then you also called him a pussy.

Friday notables:

- Calf raises!
- Bought a freeze bowl type ice cream maker from a guy on Craigslist. Years old but never used.
- Got to have many conversations with people, including a specific girl. I'm still a pussy though.
- Sampled some Fka twigs on the way home. Still not a fan outside of brilliant Mr Robot scenes.
- Game night.
- Happy day despite a world full of reasons not to be.

Made a keto ice cream (IMO syrup breaks keto). Eggs, water, flavored whey, cottage cheese, stevia. It churned nicely, and clean up was tasty. I'll sample some later tonight. I should buy some heavy whipping cream.

Can you make a gainz recipe book please?

 

I do not keep very many recipes. I keep scientific notes, but that is more to learn the cause and effect of varying ingredients or procedures. Doing it that way helped me very independent of recipes. I can wing it and have something successful more often than not. And when it's a failure, I know why and I know what I can do to fix it.

 

For this latest cottage cheese ice cream, it was very similar to the IMO syrup ice cream I made on Monday. I'll show the differences.

Blend in about 3/4 cup low fat cottage cheese

 

Blend in pure stevia. Enough to make a 30 oz strong coffee Starbucks-sweet. Approx 1/6 teaspoon

 

Blend in protein powder. I used 5 scoops of whey isolates; 1 scoop pure unflavored, 2 scoops vanilla cream, 2 scoops cookies and cream.

 

Chill, but don't freeze.

 

Set up ice cream machine with freezer bowl. Pour in the chilled custard and let churn.

Lick up the remaining mess.

I realize tonight that I have a temperature-texture problem. I lowered the temp of my freezer to get my freezer bowls cold enough, but its so cold that the ice creams turn rock hard overnight. It is too cold, but not by much. With minimal thaw time, the texture is a nice soft serve texture again. But rather than compromise on the freezer temp, I think I will experiment with additive ingredients that will keep the ice cream softer at that low temperature. Alcohol is one of them. I happen to have vanilla flavored vodka in my liquor cabinet, as well as many other good choices. Fat is another. I currently have two small dishes in the freezer testing the solidifying point of Avocado Oil versus Canola Oil. I already know Canola oil has a very low melting temp, I was curious where avocado oil stood in that regard.

- I fixed more of my Windows 10 issues between sets, but I found out that one of my 6 RAM sticks died. I can't wait until I make a new Skylake system after I move this fall. The wage increase will help with that.

Raises are always the shit. I got one this year, about $5,000, but only because we were sold and our new parent company is smaller and because of that our benefits are now worse. It'll probably be the last raise I get at this job, I'm already at the salary cap.

I made banana vanilla cinnamon almond milk ice cream. Super insulin spiker protein ice cream. I added too much vanilla vodka. The result was more like a very tasty Gelato. It never hardened, even at ultra low temperature my freezer is at. It was a brain freeze mega bomb. The macros were around f35, c250, p175. I ate all that and moved on to making tomato olive shredded chicken breast with rice. Surprised myself here, really tasty. Not sure about macros, but I think it was around f40, c220, p120. Ate all that too.

I took video of the snatch raises.

It was so fucking hot today. It's thunderstorming. To have it raining all day AND reach 100°F in my room, that's insane. I am at 2500ft elevation, and it rarely hits over 85°F, and never on a cloudy day. I was soaked and dripping with sweat by my second bench warmup set.
