Several of them appear to use beets primarily for color, like the popsicles I'm planning to make. I am also in the same boat of HATING beets, and can't really afford to make food that won't get eaten. But one beet, to make some popsicles? That, I can do. Maybe you can find something in the list that'll work for you? There's some pretty yummy looking cookie dough balls, too. Or park farther from the door when you go out and sprint to your car or and/or the door. I plan on sprinting indoors because it's cold af outside.
