BoxingYogini Posted November 8, 2015 Report Share Posted November 8, 2015 Chicken Fajitas with Roasted Spiced Acorn Squash 1 acorn squash1 pound of chicken breasts, cut into strips1 whole sweet onion, sliced into long strips2 whole sweet peppers, cut into long strips1 can of green chiles, diced (optional)Warm flour tortillas (optional)guacamole and salsa (optional)salt pepper, cumin, chili powder, pumpkin pie spicefajita seasoning packet (or make your own blend with cumin, garlic, peppers)olive oil - 2 tbsp, divided Preheat oven to 425. Carefully cut the squash into bite size chunks, removing peel and inner stringiness. Toss squash in 1 tbsp of olive oil. Spread chunks on baking sheet lined with foil or parchment. Sprinkle with salt, pepper, cumin, chili powder and pumpkin pie spice. Roast for 30 minutes or until fork-tender. Warm up a skillet and add remaining tbsp of oil. Heat oil and add chicken, browning all sides. Sprinkle with salt and pepper as it cooks. Once the chicken is cooked thoroughly, remove from heat and move to a bowl. Return pan to heat and add onions. Saute until onions begin to turn soft and translucent. Add peppers and chiles, continuing to stir and cook until the veggies are soft. Return chicken to the pan to heat it up. Add your spices or fajita packet. Just before everything is done, add the squash cubes to warm them up in the sauce. Remove from heat and serve in tortillas. hexadamsel Posted November 8, 2015 Report Share Posted November 8, 2015 Sweet and Savory Stuffed Acorn SquashOriginal Recipe from Clean & Delicious (video) Recipe slightly altered with substitutions and scaled for 2 people.1 acorn squash, halved lengthwise and seeded1 tsp. oil1/2 small onion, chopped1 cloves of garlic, chopped1/2 cup chopped carrots1/2 cup chopped celery1/2 tbsp. poultry seasoning1/2 tsp. ground cumin1/2 lb ground turkey3/4 cup tomato sauce1/8 cup dried dates, roughly choppedSalt and pepper to tastePre-Heat the oven to 400 degrees. Place prepared acorn squash, skin side up, on a rimmed baking sheet or pan that has been lightly coated with oil. skin side up. Cook for 25 minutes or until tender. While you’re squash is cooking, heat oil in a large sauté pan. Add in the onions along with pinch of salt and saute until the onions are translucent. Add in garlic, celery, carrots, and spices. Mix everything together and cook another 3-5 minutes or until the veggies are beginning to become tender. Move all the veggies to one side of the pan and add in ground turkey. Season with salt and pepper and cook until the meat has browned through, continuously breaking it up with your spatula or wooden spoon so that is in small crumbles. Mix the veggies in with the beef and add in tomato sauce and dried dates. Simmer for 10 minutes and then scoop the filing into the cavity of each squash. I don't remember having acorn squash before and I know I have never cooked one. I wanted to find a recipe that didn't involve slathering it with butter and brown sugar. This recipe almost did the trick. I think the addition of the dried fruit, I substituted dates for the cherries to use what I had on hand, made the filling a little sweet. I think it needed something to balance it out either acid or something spicy. Lightly grease a baking sheet with olive oil. Place squash, cut-side down, on baking sheet. Combine apple, celery, water, onion, and butter in a small baking dish; cover with aluminum foil. Bake squash and apple mixture in the preheated oven until squash and apple are tender, about 45 minutes. Fill squash halves with apple mixture; drizzle with maple syrup and sprinkle with cinnamon. I love this recipe! One of my favorites for autumn. Sweet but not too sweet, and nicely filling. I served a California Gewurztraminer wine with it, and it went well. Other reviews: (Gadget and Widget are 4 years old and 18 months old respectively, those are their internet nicknames) G&W: Pretty much spurned it. Gadget had "one bite" so that he could have crackers instead. Widget skipped the whole meal. Husband: Really likes this recipe, but was thinking that every food review needs the word "piquant" in it somewhere and we got into a debate about what "piquant" actually means. Turns out it really should refer to something hot-spicy, no matter how foodies use it. Every year I do, but a tiny bit less. Someday...2) My gentleman cooks, not me. My expertise stops at college cooking. That said, I made the effort, and here's my contribution: Parmesan roasted acorn squash. I made it through two thin slices before the weirdness caught up to me. My gentleman, of course, loves it. I ended up making it for my girls and mom and dad. Really enjoyed it. Roasted & Stuffed Acorn Squash with Brown Rice, Seasoned, Lean Ground Beef and Black Beans, with a touch of Sharp White Cheddar(Serves 4)Ingredients:2 acorn squash• Olive oil• Salt• Fresh cracked black pepper¼ onion, finely diced¼ lb extra lean ground beef (96/4)2 cloves garlic, pressed through garlic press• Pinch cumin• Pinch cayenne pepper• Pinch cinnamon¾ cup cooked brown rice½ cup black beans¼ cup cherry tomatoes, quartered2 tablespoons fresh cilantro, chopped, divided use1 tablespoon sunflower seeds¼ teaspoon orange zest¼ cup finely shredded sharp white cheddar cheese1 green onion, chopped, for garnish• Simple Tomato-Cilantro Salad (recipe below)Preparation:-Preheat the oven to 400 degrees, and line a baking sheet with foil or parchment paper.-Prepare the acorn squash by cutting off the bottom “point†to create a flat surface (don’t take too much off), and also cut the stem part off to create another flat surface, again taking care to not cut too much off; next, cut the squash in half width-wise, in the center, creating 4 halves; scoop the seeds and stringy bits out, drizzle a little bit of olive oil into each of the 4 halves, and add a couple of pinches of salt and pepper to each half; place each squash half onto the baking sheet with the cavity facing down, and roast for roughly 35 minutes, or until the flesh is fork tender; remove from the oven, and allow the squash to cool slightly until they can be handled; leave the oven on.-While the squash roasts, cook the ground beef by placing a medium-size non-stick pan over medium-high heat, and drizzling in about 1 tablespoon of olive oil; once the oil is hot, add in the onion, and saute for about 2 minutes; next, add in the ground beef and break it up with a spoon/spatula into small crumble; once the beef has slightly browned, add in a couple of pinches of salt and pepper, the garlic, the cumin, the cayenne and the cinnamon, and stir to combine; allow the beef to finish browning, then turn the heat off, and turn the seasoned beef mixture out into a bowl; next, add to the beef the cooked brown rice, the black beans, the quartered cherry tomatoes, the chopped cilantro, the sunflower seeds and the orange zest, and combine the ingredients very well; add another pinch of salt if needed, and set the mixture aside for a moment, keeping warm.-Once the squash is cool enough to handle, spoon equal portions of the beef/rice mixture into the cavity of each squash half, sprinkle over the top about 1 tablespoon of the sharp cheddar cheese, and place the halves back onto the baking sheet and into the oven to bake for an additional few minutes just until the cheese melts; serve with Tomato-Cilantro Salad on the side, for a fresh and bright addition. 5 Quote Level 4 Demon/Assassin We Can't All Be The Hero.
