Hey all you wonderful people <3

 

My brain has been a terrible jerk lately. Depression and anxiety have been far too high for me to function. So it's time to work on battling the brain beast, and try to get back to what has worked. 

 

So....daily to do list! That's my only goal. It worked well before I got derailed by a break in my routine, and then it was just so hard to get back on track. No use dwelling on that though because the only thing I can control is what I do right now. So here we go....

you guys. the love. I am feeling it <333

 

Okay so three things off my to do list yesterday. Which...could be worse. I did some great mad scientist experiments in the kitchen: oven fries at 76 calories per ~20 fries, 150ish for 40. And a cheesy orzo dish with spinach, broccoli and red peppers, at 130 calories per 3/4 cup serving. Magic. So I can eat triple the amount, clearly :P 

 

It is absolutely disgustingly hot here. It reached 110 yesterday (43.3 celcius for those not in the states). Yikes. Made cooking a bit uncomfortable but I NEEDED FOOD.

 

So three things yesterday, let's have that be my starting point. Trying for 4 today. Slow and steady and all that :)

OH and i've been practicing my food photography! So here are a couple recent breakfasts because they seem to be my most aesthetically pleasing meal.

I am absolutely positive I could have left a piece of bread out in the sun and made toast.

Spinach, Red Pepper and Broccoli Orzo

 

8 servings at 130 calories per serving. Serving size is 3/4 of a cup. Recipe makes ~6 cups

 

Ingredients: 

  • 1 oz, Cheese - Mozzarella, part skim milk
  • 4 cup, Spinach 
  • 1 cup, chopped, Peppers, sweet, red, raw
  • .5 cup, chopped, Onions, raw
  • 2 tsp, Garlic, raw
  • 0.50 tsp, Black Pepper - Ground
  • 0.75 cup(s), Orzo (Dry, Uncooked)
  • 0.50 tbsp, Butter - Salted
  • 0.75 cup(s), Cheese - Parmesan, shredded
  • 2 tbsp(s), Milk - Nonfat (fat free or skim)
  • 1 tsp(s), Nutritional Yeast Seasoning
  • 2 cup chopped, Broccoli, raw

 

Directions: 

  1. Heat a skillet pan to medium high heat
  2. spray pan with cooking spray
  3. Boil 6 cups of water in a pot, add a ~teaspoon of salt
  4. chop onion and garlic (I used pre-minced because lazy)
  5. Chop peppers and broccoli
  6. Place onion and garlic in the pan, allow to caramelize a bit, stirring every so often
  7. Add orzo to water once boiling
  8. add peppers and broccoli to onion and garlic mixture, addd some salt and pepper
  9. allow broccoli and peppers to get a bit tender and slightly charred. Add water to the pan toward the end to steam them a bit and get them a bit softer
  10. When orzo is cooked (about 10 minutes) drain into a colander and rinse with cool water to prevent sticking
  11. Add orzo to vegetable mixture
  12. Lower heat, add butter and stir through
  13. measure out cheese, fold it in to the vegetables and orzo, adding a little bit at a time so it melts evenly and distributes
  14. Add garlic salt and pepper to taste, add the nutritional yeast (technically the yeast is optional but it adds a nice extra cheesy flavor IMO)
  15. add the milk, stirring constantly
  16. Serve and enjoy :) 

Oven Fries: 

 

Makes 6 servings at 76 calories per serving, or 3 servings at 152 per serving. OR Eat them all (about pound of fries) for 456 :D 

 

Ingredients: 

  • 3 small russet potatoes (about ~450 grams)
  • Lawry's Seasoned Salt (you could use garlic salt, onion powder, lemon pepper, italian herbs...whatever. I am just a seasoned salt addict)
  • 1 tablespoon garlic olive oil 

Directions: 

  1. Preheat oven to 450 degrees farenheight (232 celcius)
  2. Scrub potatoes clean, then dry
  3. cut potatoes in half, then in quarters, then into wedges, then cut those wedges into halves or thirds depending on the size. you want a fairly thin fry (about a quarter of an inch wide)
  4. Place cut potatoes in a bowl
  5. In another bowl whisk together olive oil and seasoning
  6. Pour olive oil over the fries, tossing to coat evenly
  7. Place Fries on a baking sheet spayed with cooking spray, trying to leave a bit of space between the fries
  8. Bake until easily pierced with fork and starting to brown (20-30 minutes)
  9. Increase oven to a broil, and let fries crisp up a bit more for about 5 minutes
  10. Enjoy :) 

*****NOTE*: I made these in a toaster oven because it was far too warm to even contemplate turning the oven on. But it should work just the same, probably with slightly shorter cooking times. Eventually i will make these in a real oven and let you know****

Whoops alright. So two days ago I managed to do five things off my list. Only like two yesterday. Still better than nothing. 

 

And OMG you guys I did something fitness-y that I've never been able to do: jog for 20 minutes straight!!!!!!!!!!!!!!!!!!!!!!!!!1!!!!!1!!!!!!!!!!!! Over a mile :D!!!!

 

Granted it was super slow (4.0 mph) but WHATEVER. IT COUNTS. *counts it*

 

I need to start getting up semi-earlier so I have time to make my to do list. I really get going around 11 but it feels too late to post it :/ ? Maybe the obvious answer is just  to do my to do list before breakfast... :P 

 

Therapy was good today. Going to my grandma's tomorrow to take her to lunch at the senior center. So that'll be nice :)
