Yo, I'm back.

So I'm literally back from the wilderness.

I just spent a month living in Guatemala, with a few weeks on both ends that got swallowed up in exams, preparations for the trip, and working at a couple summer camp things. Guatemala was kinda crazy, partly because I was living in a different country with crazy food and madhouse traffic, and partly because I was there to learn Spanish in four weeks (?), with absolutely zero background in the language. It actually went really well; I had tutoring five hours a day with a teacher who spoke no English whatsoever, so I had to learn fast if I wanted to have any sort of conversation.

 

Anyway, now I'm back (yay for American plumbing!) and looking forward to getting back into regular workouts, cooking, all that good stuff. I'm interning in central VA for the year, so I have to adjust to a new speed of life, and not having university classes for the first time in ever. I also have to drive to a gym now, as opposed to having it right next to where I live - yes, I was spoiled - so this challenge will mostly be me trying to get into a new sort of weekly routine.

 

One of the great things about my life and location now is that I can  return with a vengeance to one of my favorite athletic pursuits: obstacle racing!

This challenge will be focused on rebuilding my base and conditioning. Then, in late September, the fun really begins...

 

Ze Goals:

 

"It's not my fault being the biggest and the strongest. I don't even exercise."

- Make it out to the gym at least two, preferably three times per week.

Actively joining a gym is actually a new thing for me. I've always been part of some kind of university community with an athletic center, so finding, signing up for, and attending a proper gym is a slightly different experience. Right now, I just need to actually show up to the place and get used to the new environment. My runs are a normal enough part of my daily routine that they should hopefully happen naturally.

 

"They always grow louder when they're about to feed..."

- Cook at least two new recipes per week.

This shouldn't be too hard. I'm happily working through a couple of my cookbooks, and the results have been excellent; I just need to keep consistently working on expanding my repertoire. Since this is already a big hobby, I expect good results. I may even post photos for bonus points. ;)

 

"Why won't my arms move?"

"You've been mostly dead all day."

- Stretch, at least for a couple minutes, daily.

I've been feeling a bit creaky lately, probably from the weird mix of sitting around and rare high-intensity exercise that's been thrown at me this summer. I want to try to build in a stretching routine into my mornings to deal with some of this. 

 

"And yet he gains!"

- Run a race. Any race. Don't die.

This will probably be a 5k in the neighborhood or something. I think I need to psychologically adjust to the idea of races and runs with other people again, after not doing anything of the sort since March.

 

Oh, and it's great to see y'all again. It's good to be back.

This was honestly a bit dry; I should have used a juicier cut of chicken than these breasts, but it still turned out halfway decent.

Basically: Roasted chicken on a bed of root vegetables garnished with fresh rosemary and lemon.

This morning was a great start to my weekend - somehow managed to get myself out the door for a 4-mile run, which was a bit painful (and crazy hot), but left me feeling pretty bouncy afterward. I'm pretty sure the tired creaky feeling from the last several weeks has been more from the sad state of my workout program than anything, so this is a good sign.

Busy morning, but I got some rest this afternoon. And then, dinner!

Behold: Harissa Crab Cakes! I put lots of lime on 'em. Super moist and tasty.

This probably shouldn't count as a meal, but I also baked a giant pile of gluten-free chocolate chip cookies while I was watching the Olympic closing ceremonies.

 

My housemate:

"Huh. These are gluten-free?"

*tries one*

"Wait, they're really good... I think I'll have another one."

Update: my housemate just came looking for more cookies. I feel like this is an achievement. (I hid the cookies, though.)

 

Also, I managed to get my stretching in today! Post-stretch looseness is always a great feeling. Since the heat has calmed down a bit, I'll probably take a walk around the neighborhood in the evening.

Otherwise, I'm basically hiding at home today, since it's my day off and I'm an introvert who needs time in his cave.

 

Tomorrow, maybe signing up for my gym, finally? Maybe?

I totally thought you were in RVA. That has no effect no anything, except to make me think I'm crazier than originally thought.

Oh good, I'm not totally crazy. Idk, I tend to think of central as west of Richmond/in the middle of nowhere. But as someone who's not from Virginia to begin with, I basically think of anything that isn't NOVA/RVA as the middle of nowhere anyway. And that extends to "Is there even anything in Richmond aside from VCU?" I am a jerk from the North lol

To be fair, I used to live west of Richmond in the middle of nowhere, and we had the annual "Heart of Virginia" festival there every year, so that's pretty reasonable.

It is rather fascinating, isn't it? :D

 

That recipe was a spur-of-the-moment adaptation of the way I would normally roast a whole chicken, namely, on a bed of roasted vegetables (in this case: onions, potatoes, sweet potatoes, garlic cloves) and basted with olive oil and lemon juice. However, it definitely works better with juicier meat, because everything got a little dry just using the chicken breasts; for example, with a whole chicken, a lot of the juice cooks into the vegetables as well and makes them super tasty.

 

I also made gazpacho for the first time ever last night. It's a fascinating dish, in that it's all of my least favorite fresh vegetables blended together into a cold soup that inexplicably tastes amazing.

I am going to have to try this. I'm going to visit my boyfriend next weekend. Maybe I can try it then? Do you have a link to a recipe or something? I can try eyeballing it but I've actually never cooked a whole chicken before. :flustered:

It's outrageous. I think the recipe I use is basically this one, or something close to it (I add sweet potatoes to the mix as well):

With a little modification, you should be able to do that recipe just fine with breasts only (skin on for best results) – chop the veggies smaller (so they cook as fast as the chicken), and either use more chicken or a smaller pan. It's a surface area to juiciness ratio sort of thing.

Awesome! Thanks for the advice. I'll keep that in mind for the next round, for sure.

 

No gym so far this week, sadly. I'm second-guessing my choice on that; I was looking into joining the local outlet of Gold's Gym, but research and dozens of horrible reviews have convinced me I'd really be better off elsewhere. So tomorrow I may go exploring again.

I don't know if you guys saw the new NF blog post for the Chicken Satay recipe, but it's really terrific. I grilled it up for dinner a little while ago, and it was amazing (especially the cashew red curry sauce). Give it a try, it's super tasty.
