OMG. I totally meant to follow your challenge and then failed.  SO GREAT SO FAR and I'm glad your husband is backing your diet choices.

My wife and I have been doing enchiladas/tacos and using a baked sweet potato as the base instead of tortillas.  Also, if you haven't gotten on board with Cauliflower rice yet... that's one of my new favorite paleo options.  You can use it anywhere that you would have used traditional rice.  I've made Spanish rice, fried rice, coconut rice...I feel like Bubba from Forest Gump.

Again, great job!

Thank you so much!!! :D

WOAH for RICE?! Oh man I need to try this ASAP! Just the other day I made cauliflower mashed potatoes for the first time and really loved it! I'm totally going to have to try this rice now! Thanks for the tip! What is your favorite way to make Spanish rice?

I'm not too big on sweet potatoes - I'm just now starting to like sweet potato fries! - but I'll give it a shot as a taco shell! The other thought I had was to try to make my own Paleo tortillas, which seem a bit time consuming but still easy.

Yeah, the hubby finally agreed that yes, the health is more important. I've only purchased chicken and eggs from a local farm and butcher that treats their animals humanely, so that really helped, and kept with my beliefs, too (I hate how they're treated :(). Yay for things going so well!

I'm still trying to nail down my favorite spice blend, but I've just been trying different recipes online to see what we like best.  When cooking just keep in mind that the cauliflower will have a fairly high moisture content so you may want to reduce the amount of broth added (if the recipe calls for it).  When I find a winning recipe I will definitely let you know.

I can definitely get that.  We have recently gotten into sweet potato hash browns.  The sweetness takes a little adjusting to, but we've really loved it.  Also let me know if you find a good Paleo tort recipe!

Large-scale commercial farming has a very sad environmental and humanitarian toll.  Thankfully, there is a pretty significant movement of sustainable, humane farmers who operate on a small scale and can provide humanely raised and slaughtered foodstuffs.  I'm glad you've found some near you!

Wow, what a great challenge so far! Those are some big changes you're making, I'm so impressed with your progress already! Awesome that hubby is on board now too, that will make it so much easier.

Thank you so much! Yeah, now that I switched to Paleo, that alone has made me feel amazing! :D

If you don't like the sweetness you should try Japanese sweet potatoes. They're purple skinned with a white or light purple flesh and do not have the sweetness of the orange ones.

Well done!  I'll pick this one up this weekend.

Awesome, thank you so much! If you do, I would greatly appreciate an honest Amazon review. Reviews on Amazon are the only way to keep my book cycling through the algorithm so it doesn't get lost. Thank you again!

Here is my four week challenge to start today!

1. No extra spending

2. Eat smaller portions

3. Pay off the two loans that are almost done

4. Go for a 15+ minute walk after dinner every single day.

If you have read my other posts or my NF character bio, I don't have much to choose from when it comes to working out due to health issues, but I want to get around that so badly. I have to start small, so hopefully this works out! Thanks in advance for support and suggestions if you have any! <3

I did it! I completed my first NF challenge! Here's how I did:

1. 80% ... I ended up having to buy a few books for book clubs as they weren't available soon enough (or at all) from the library. In addition, I'm about to release my first novel and I had to spend some money on the release party. But other than that, I resisted the urge to buy anything that wasn't on my mental list of "not considered extra spending" such as groceries, gas, etc.

2. 95% ... This wasn't easy, but I did it for almost every meal! It was the most difficult when I wasn't supposed to eat more but was still hungry. But I kept at it!

3. 100% ... Both are paid off, and were paid off early, before this challenge had completed!

4. 50% ... There were a good amount of times that it was blizzard-like conditions, or a pelting, stinging ice storm outside, meaning I couldn't get outside. I'm sure some may have done it regardless, but I just couldn't. Next time I'll make sure to give myself some wiggle room with what I can do for exercise instead of sticking to a single thing.

Even though it wasn't on my goal list this time around, I DID accomplish a life goal: become a published author!!! Check it out! I released the prequel to my trilogy last week! https://www.amazon.com/Grim-Inception-Trilogy-0-5-ebook/dp/B06XHCPPQV/ref=sr_1_1?ie=UTF8&qid=1489432598&sr=8-1&keywords=grim+inception

The novel itself will be released any day now! All I have left to do is design the cover and finish line edits, and then get a sample printed to ensure it is exactly what I want it to look like, then it's going to be published! AHHHHH :D

Well done, CB!  I get not wanting to go out in blizzard-like conditions.  And way to figure out an alternative for the future.  Keep kicking butt!
