My wife and I have been doing enchiladas/tacos and using a baked sweet potato as the base instead of tortillas. Also, if you haven't gotten on board with Cauliflower rice yet... that's one of my new favorite paleo options. You can use it anywhere that you would have used traditional rice. I've made Spanish rice, fried rice, coconut rice...I feel like Bubba from Forest Gump. Just the other day I made cauliflower mashed potatoes for the first time and really loved it! I'm totally going to have to try this rice now! Thanks for the tip! What is your favorite way to make Spanish rice? I'm not too big on sweet potatoes - I'm just now starting to like sweet potato fries! - but I'll give it a shot as a taco shell! The other thought I had was to try to make my own Paleo tortillas, which seem a bit time consuming but still easy. Yeah, the hubby finally agreed that yes, the health is more important. I've only purchased chicken and eggs from a local farm and butcher that treats their animals humanely, so that really helped, and kept with my beliefs, too (I hate how they're treated ). When cooking just keep in mind that the cauliflower will have a fairly high moisture content so you may want to reduce the amount of broth added (if the recipe calls for it). I'm glad you've found some near you! If you don't like the sweetness you should try Japanese sweet potatoes. Both are paid off, and were paid off early, before this challenge had completed! 4. 50% ... There were a good amount of times that it was blizzard-like conditions, or a pelting, stinging ice storm outside, meaning I couldn't get outside. I'm sure some may have done it regardless, but I just couldn't. Next time I'll make sure to give myself some wiggle room with what I can do for exercise instead of sticking to a single thing. Even though it wasn't on my goal list this time around, I DID accomplish a life goal: become a published author!!! Check it out!
