Have an awesome weekend!!!! We must discuss these daphionois... one of my favorite dishes from an old haunt in Brooklyn that is no longer across the street :( Wills you to share recipe pleaseeee???? :) They look... just insane and I want them in my face!

ingredients

12 oz. Yukon Potatoes, sliced thinly

Half of a shallot, minced

3 Chives, minced

5 fl. oz. Heavy Whipping Cream

1 oz. Grated Parmesan Cheese

0.5 oz. Butter

 

Preheat oven to 400F

i don't peel vegs if i can avoid it so i just washed, sliced thin, covered with lightly salted water in a pot, brought to a boil, reduced to a light simmer for 10 mins. strained, added cream, shallots, chives, half of parmesan, S&P. i don't know if this matters but i let it sit in the pot like than for 10m while i did my mobility

transferred to cast iron, topped with other half of parmesan/more S&P and then baked for 15! it was done before some of the other dinner stuff so it did stay in the turned off oven for maybe 5-10m after that too

quick updates!

 

Friday was OHP, worked up to a set of 70x6.

cooked up a taco bar for friends friday night to be inclusive of vegetarians, GF, and lactose peoples. dranked some dranks

 

Saturday was a whole lot of nothing fitness-wise. big potluck brunch with friends, porch sipping, ocean dipping, brewery visits, and hours of socialization!

 

check plus for lifting goal, missed one of 8 on the cardio sessions goal, and did really well with yoga.

did only okay with my goal of no work goodies at least 3 days per week. weeks 1, 2, and 4 were great but week 3 was a fail.

miserably failed my alcohol goal-ish thing

did not do burpees

 

Sunday started zero week of the next challenge. spent the day cleaning up the house rental, eating easter ham, napping, and meal prepping.

 

Monday was another brunch day with friends for the boston marathon. SO and I finally took this day off (most of boston just gets it off) and enjoyed the fabulous weather and spirit. walked around a lot, drank many drinks, ate ice cream and chipotle for dinner.

we did get in gym time before all that and i worked up to 140x2 back squats.

 

back to work today and i'm fairly dehydrated and super full feeling. which probably means i should stop eating the rugulas in the work kitchen...
