runfast Posted April 8, 2013 Report Share Posted April 8, 2013 Hey people, I found an awesome recipe online for sweet potato pancakes off of a blog and thought I would share it with you from here http://paleofeet.wordpress.com/2012/10/11/paleo-sweet-potato-pancakes/.... Basically you nuke a chopped up sweet potato for about 4-5 min with a little bit of water in the bottom While its cooling, whisk 2 eggs andadd 1/4 nutmeg1/4 backing powder3/4 cinnamontinnyyy bit of saltdrizzle some honey(I also add in a splash of almond milk) mix the mashed sweet potatoes and egg mixture together and cook in a skillet, you don't even have to use the oil if you use a non-stick skillet (which cuts down the calories A LOT) Wicked easy, simple breakfast! nom nom nom Link to comment

Maybe I'll make them for breakfast Saturday morning before I go to an aikido seminar.
