While this is shamefully out of date, as in I haven't posted in a year, I used to have a cute little cooking blog: www.ceeinthekitchen.com. I need to start that back up again. I should probably start cooking again, too. I DID just make a ridiculously good new chili recipe that I could post...

I use 3 recipes, haha.... this is the one I've been eating all week:

 

Ground Beef Chili:

2 lbs ground beef

1 green bell pepper, diced (take out the seeds and white veins)

1 med/large sweet onion, diced

1/2 to 1 small jalapeno, seeded and minced (depends on how hot you like it, I could happily go up to 2, friends think the 1/2 to 1 is just a touch of heat)

3 garlic cloves, minced

2 tsp kosher salt

1 tsp freshly ground black pepper

2.5 Tbsp chili powder

2 tsp cumin

1/4 tsp cayenne pepper

1 Tbsp Penzey's Chili 3000 (LINK)

29oz can diced tomatoes, undrained

2 cans dark kidney beans, lightly drained (I don't see why you can't eliminate these if you're paleo, I bet it'll still be tasty)

 

In a big pan or stockpot over medium heat, brown the ground beef, stirring til its in small pieces. Pour off some of the fat (if it pleases you). Add in the onion, peppers, and garlic, and salt. Cook, stirring, until the onion and pepper are softened. This will brown the heck out of the ground beef, too, which you want. Stir in the rest of the spices and cook another few minutes.

 

Now you can either:

(1) Add the tomatoes and beans to the pot, mix, and simmer on low for a few hours for the flavors to marry

(2) Put the meat mix plus the tomatoes and beans in a slow cooker and put on high about 4 hours (or low up to 8)

 

Serve w/ cheese and fritos :-) Or tortilla chips. Or crackers. Or with toppings as you like :-)

Ceethegreat, that chili recipe sounds delectable. (No wonder my chilis always turns out disappointing, didn't know you're supposed to simmer it for hours!) Is there a way to adapt it for a pressure cooker?

And Synyster, good luck with your new blog! Maybe it'll be the perfect antidote to your cabin fever.

@ Knockingdog -- I've never cooked with a pressure cooker before, so I'm at a loss there! But otherwise yeah, in general, chilis get so much better the longer you cook them :-)

 

I'm still learning the ropes on pressure cooking, but recipes for long, slow-cooking things like corned beef and oxtail soup seem to require 45-60 min in the pressure cooker. Think it's worth a shot? The last thing I want is to open up the pot and have a pile of beef and veggies with all the flavor cooked out of it.

But honestly, your philosophy is wonderful. "Pretty good" strikes a healthy balance when the paleo community gets to be too much sometimes.

Thanks! Yeah, I hate all the snark and backstabbing in the Paleo community. I was the subject of a post on Paleo Drama, although it (a long quote from me from a different blog) was submitted without comment and I think was supportive of me - but it still was a shock!

Avalonna, really? That's insane! Why/what happened?

 

Nothing to do with the current drama, thank god. I took issue with a post by a paleo guru, and called him out on it.

I post some of my work for art class on my deviant art.  Rarely post anything though.

 

Be warned there are some nude drawings from my figure drawing classes in my gallery (yes to  learn we draw naked people).  Everything should be properly filtered but be warned.

Wow your good! I am slowly improving on my painting and drawing skills. I'm only working on photography for my store until I improve on painting and drawing.

Speaking of Shameless self promotion, did you make that costume in your profile picture? It doesn't look like an out-of-the-box Costume?

 

Haha, I did indeed, for New York Comic Con this past fall. Luckily with all the shadow in the picture you can't tell how reeealllly handmade it is.

The Color Comp Test was done with pencil, ink, colored pencil, watercolor, and just a little gauche.

 

This was a very small piece (like seriously 2x2 inches) that I did to try out the technique.  I then used it on a larger piece of two gladiators fighting in the arena.  I will have to upload that eventually since I just got it back.

 

I appreciate your kind words and praise. The work I do now is a direct reflection of me changing my life around just over a year ago.  Not just with weight, but my direction in life. Before I started these classes in September of last year, I had not drawn for 8 years and had never painted. In fact the helms deep work in my gallery was my first ever true painting. After leaving my job at and Internet Security business (I have a bachelors in Computer science) I was worried that I would not be able to pursue a career that would make me happy. Your comments will continue to motivate me!
