What are some good portable paleo snacks?

I'm kicking off the paleo diet in conjunction with deploying to the Pacific. I'm floating around on a boat until next summer. Mealtimes aren't so bad; there's always salad and fruit, there's almost always one entree that doesn't involve grains. I'm able to work out plenty, since there's nothing to do.

Snacks are the issue. I've been eating 5-6 smaller meals/day for a long time now, and I don't like being at the mercy of the chow hall's hours. I've brought a few pounds of beef jerky, a gallon bag of nuts, and some dried banana chips my wife made. She'll be resupplying me every few weeks with more of those things (and different dried fruit).

Anyone got any suggestions for additional snacks I could have her ship me, get some extra variety in the diet? Or other general suggestions on doing paleo that might particularly apply to my situation?

Chicken, sausage, apples, apples with almond butter, ants on a log (almond butter not pb)

If you can eat it with your fingers, I consider it a snack, regardless of if it's usually served as a meal

All of those would be great if I was ashore at home, and indeed a lot of that is good for when I get back next summer. I guess I may not have been clear enough about my requirements here.

I'm looking for stuff my wife can buy/make at home (we do have a dehydrator) and ship to me on the boat. Jerky/nuts/dried fruit is what I'm doing so far, because it all stores and lasts. I need stuff that's gonna be workable a month from the time it's taken out of the fridge (two weeks to get to me, and two weeks in my snack drawer as I work through the bag). I can just kinda picture the jerky/nuts/dried fruit combo getting kinda old over an 8 month deployment.

My suggestion would be to make some no-bake bars/balls, etc with Paleo ingredients: Nuts, dried fruit, spices, dark chocolate, etc. in various combinations.

Also, if you've got a dehydrator you could make some natural fruit roll-ups with various kinds of fruit. There's a ton of recipes all over the web for those.
